      For this great celebration of Boney's memory, I just placed my first Wild Forks order. Prime beef short plate ribs that I'll smoke and braise a little bit with a Basil Hayden bourbon "bath" (and maybe a snort or two while cooking!). Appropriately, the only rub I have is a gift from my Secret Santa - Bull Shit from Big Cock Ranch.

            Here’s to ya Bonesy! Ordered a new 22 Weber thru the website n got a free wireless probe thermometer. The little redhead should arrive next Tuesday. I am sure I could root around n find a btl of Basil Hayden or Knob er sumpin!

              Picked up a three pack of St. Louie spares at Costco today. $3.29/lb which is the lowest price in a while now. So I’m ready! Here’s to Mr. Bones!!!

                Mr. Bones was one of the first ones to give me advice on "the good one" when I got it. I’m pulling them out and will be enjoying a Guinness that day. Fair winds Mr. Bones….

                Finally decided what to make - I've got two four-bone racks of beef chuck ribs in the chestie, one Click Akaushi wagyu and the other Creekstone USDA prime, both right around 4 lb/1.9 kg, so I can do the arch-typical comparison between the two with all else being equal It will be my first smoke since my surgery a week ago, a fitting occasion on which to come off the DL.

                  Glad you are feeling better, and looking forward to hearing about these. The Click Akaushi ribs are actually cheaper so I've been curious as to how good they are compared to the Creekstone ribs.

                    Picked up my tribute today.
                    Decided on bone-in chuck and asked my butcher past Thursday to cut me a special one. Collected today, salted and it's thing in the fridge.
                    Ready to celebrate Mr. Bones.

                      I received my Wild Forks order of prime beef short ribs for this memorial cook. I had also order 2 NY strips, delivered in one box. They were all frozen solid as I expected - of course, the place they ship from is only about 20 miles from me, so no surprise there.

                      Here is a photo after the ribs have been in the frig for 2 days. I am a little disappointed in the rather heavy fat "wad" over 1 section. Regardless, I'll trim it up later in the week, rub it with the BS rub and smoke it with the bourbon mix to baste/braise.

                      In honor of a fine gentleman and great person - still hurts.
