          I’m not from down there, texastweeter Jerod Broussard barelfly , so I may be wrong about this, but I thought Texans say “Hook ‘em” and do something silly with their fingers. Vas is dis “gig ‘em” shtuff?

          Texas is a very divided state when it comes to college sports. My daughter and son in law are Aggies with all the traditions that go with that school. If I remember right last night was muster. Groups of A&M alum gather together and read all the names of the Aggies who lost their lives serving our country. That’s just one of the traditions that make me so proud of them. I’m a born Texan, but I bleed crimson and cream, Boomer Sooner. Both of these schools have an intense rivalry with UT

        Grates. I'll need them for this as a warming oven. Just large enough to hold a pan.

                Major relief. I was more rushed than I wanted because of this cook, but I really needed it.

              Initial "cooks" upgrades.

              Burning chunks get the deflector plate hotter than I prefer. Chunk holders were unstable, not the least bit stable. I cut slits in the newly installed lower deflector (2, 1/8" plates welded together) for smoke to pass thru. I also need to add small divertors on the edges (meant to do that and forgot) so the grease doesn't drip RIGHT ON THE EDGE of the pans.

                Love that you are making the fine tune adjustments as you cook. How cool is this!

              Got my tabs welded on the corners so less grease drips off the edges of the two side water pans. Those two pans receive everything off the deflector plate.

              Better set up to get all the excess grease off the water pans. Outside stainless sink. Two pots of boiling water and DONE.

              No, the high tech drainage system was not included with purchase.

              Dan Deter Side rails installed. Still to cut out EVERYTHING that makes up the drawer. 14 gauge so it won't be that bad.

                Getting drawer slides installed right is one of the banes of my existence. Looking good so far!

              Dan Deter yeah, these are kinda tight the last bit in, but if that keeps this sucker closed, so be it.
