    Finished the Close To Katz pastrami recipe from here tonight! Delicious! Happened to have a store bought corned beef in the fridge and started with that. Soaked in water overnight, rubbed with the rub from the recipe here and left in the fridge for about three days. Smoked on my Traeger until about about 150 and then steamed until done about 2 - 2 1/2 hours. What a great recipe! I never had pastrami from Katz but I used to get Carnegie Deli pastrami all of the time when I worked in Manhattan (sometimes brought a pound or 2 home on the Long Island Rail Road, the entire train would smell by the time I got off!). The only change I made was toasting the peppercorns, coriander and mustard seeds and I didn't have any coriander powder or onion powder on hand. Will definitely make again! Looks a little dry in the sandwich photo, but it really wasn't. Thanks for a great recipe!

        Both the before and after are great. And, I might pick at that after plank for some bits.

      Off work today and figured I would make an afternoon snack of crispy grilled wings on my new WSCG. Used the Vortex, added some cherry wood as well. Coated wings with Kosmos Q Dirty Bird rub and finished with the Buffalo Wing dust. Came out SO good!

      Nothing fancy, but a grilled chicken and carrots cooked up on my Napoleon with grill grates. These things work really well. Made up some homemade Dijon honey and horseradish sauce with a little iceberg and a tomato on top. Surprisingly, the tomato was pretty decent for this time of year. Click image for larger version

      I haven’t had pasta in months. Just some Zitti and cauliflower w red onion, pepper flakes, mint, garlic and pecorino. Simple.
