    Well, damn …. It was stupendous. And it wasn’t BBQ. And I didn’t get any pictures. ….. but if you want to cook a legit Cacio e Pepe, use this recipe by J. Kenji Lopez-Alt. I did and I swear it was as good as anything we had in Rome.

    Porterhouse on the Kettle with SnS and Mesquite. Nice cut. Seasoned with SPG Plus Butter. I like that stuff.

    Last week I was on vacation visiting my Best Friend in Crystal River Florida. Anyhow I was forced to cook on his El Crappo El Cheapo Gas Grill. That was indeed the Brand Name. (I gave it anyway) I am not complaining because I was grateful to have a grill to cook on. My Friend Ivan is from Belize Central America. To make a long story short, My friend Ivan told me, "Troy...From you can cook, you can cook any ting. On any kind of rass." Meaning, if you know how to cook, you can cook anything...On anything... Which is true. We made an awesome meal on a crappy gas grill.

      Jim White Bummer, we took a ride somewhere north of Ocala to look at a boat for sale. Didn't buy the boat but we were indeed near by. Your outdoor kitchen is going to be spectacular!

    In honor of Mr. Bones I smoked a couple racks of Baby Backs today in the OG. I had thought about doing them in the Bronco, until I realized it was buried behind a pile of stuff my son dropped of in the garage. He's going through a divorce and currently in an apartment.

        First time vegetarian chili. The recipe convinced me, realy delicious. Chili without beef, I couldn't imagine, but it works

          Nephew asked me to try my hand at bacon. Gave me a belly cut from one of the hogs they were raising that they had to personally butcher as it broke a leg and couldn’t be loaded out to the butcher. Sliced a couple pieces and fried it up…passed SWMBO taste test…as we have a couple belly cuts from one of the other hogs. Used the sites maple bacon recipe.

            Coq au Vin Tonight....I more or less followed the New York Times Recipe. I have to say it's a refinement of Julia Child's Recipe. It was served atop Garlic Croutons made from some of my Homemade Sourdough Bread. Only thing, I had to use frozen Pearl Onions Rather than Fresh because I could not find Fresh..I think, this was one of my best Coq au Vins ever. I used California Well REaD wine for the cook.
