Just the two of us now, so on Christmas day:
    Roasted Teres Major (medium rare).
    Cheesy julienne potatoes.
    Green beans.
Most likely a trip to the casino sometime during the day...

We’ll be at our son’s house on Christmas Eve. But on the day, it’ll be just the two of us again. We ordered a fully prepared meal for T-Day from a local grocery store as it was just the two of us. I was skeptical but it was actually terrific. Full turkey dinner with all the sides. Plenty of food and then some. Just warm it up and serve. Anyway, they offer a similar ham dinner for Christmas so we ordered that. We’re expecting it to be terrific as well. Easy peasy.

The only thing set in stone right now is the prime rib and the mashed potatoes. I used to make a lot of fancy sides. But through the years I’ve tracked how many of what leftovers there were. And I’ve stopped making a lot of them. And let’s face it: when you go to a fancy steakhouse, you get beef, potatoes, and something green. Maybe a salad.

I think last year I roasted Brussels sprouts, but I blackened them too far. Kenji just did an article about that, about how easy it is to blacken Brussels sprouts instead of the light char. I’ll read it again in the next week.

I, too, have only locked into the prime rib and mashed potatoes. I keep threatening to make Yorkshire Pudding or popovers, but mostly have not followed through. The one time I did, they were a hit, so I'll try to muster up the energy again this year. I'll probably make some simple steamed broccoli or asparagus - whatever looks better in ShopRite. We will have Barbara's mother here. Inviting Barbara's daughter and her partner, but unsure if they will come - they have options.

Nice host/hostess present to share. I wish someone would bring a Katz pastrami to our house. (just a little envious, don'tcha know ) Do you order directly from Katz or do you go through Goldbelly?

My parents will have crab bisque, chili, and trays of goodies, snacks everywhere.

We host my wife’s side, and there are a few expectations my beef roast and pizzas!

I’ll bake likely 3 -4 pizzas, oven roasted Chuck roast, oven roasted butter broil finished potatoes, we will have several pies, goodies, and I’m thinking of adding 3 meat Italian American meatballs, and an all day San Marzano red sauce… no sit down at this one, sit, stand, eat as you feel hungry.

Christmas with the kids this weekend will be lobster tails. Not sure the sides yet.

Christmas with lifelong best friend and his wife the following weekend, shrimp cocktail, prime rib, creamed spinach, salad, some type of potato they will provide. Dessert to be determined.

Christmas day, eggnog and a quiche for breakfast. Dinner will be a smoked duck with a blueberry reduction sauce and a side of wild rice. Vegetable to be determined.

Double smoked Ham and other stuff.
I bought a ham before Thanksgiving at HEB on a coupon for free turkey with ham purchase.
That’s the extent of my planning so far. Good thing Christmas is still a month away!

The turkey I smoked in the PBC for Thanksgiving as a secondary bird was such a hit that I've just been asked to smoke another for Christmas Day.

Peeling potatoes for mashed potatoes is my only other responsibility.

I have no say in the rest of the menu. I just lift heavy things and set up tables and chairs when asked.

When I saw your Thanksgiving Turkey post, I just knew that friends/family would be asking you to do it again really soon. I don't blame them. You've got the touch.

Christmas Eve I’m doing the rib roast and my wife is doing butter horn rolls (look forward to these every year). We’re going to SIL and someone else is doing the rest: cheesy potatoes, butternut squash, green salad, and berry salad (it’s more like a dessert and so good). I’m probably missing something else. There will be pies and pumpkin cookies, maybe ginger snaps.

Day we generally keep it simple with make your own sandwich with deli meats and chips, dips and salsa. See’s candy, and whatever else that will help me gain weight.
