Doing braised beef short ribs from part of our 1/2 Wagyu beef we bought. Will serve over mashed potatoes and have a baguette and salad!

ecowper they were delicious. I forgot to snap a photo. I could have reduced the braising liquid a bit longer, however, I will do it again.

Also, I used the Serious Eats recipe. We didn't have any Port Wine so I used a Marsala wine I had for reduction. Took about 2.5-3 hours to reduce it to a 1/2 cup. Also, instead of thickening the sauce with a corn starch slurry I thickened it with beurre manié.

Well…the rain changed our Christmas Eve plans…
On the plus side…I didn’t have to endure dried out brisket or ribs. Whew
On the negative side…I didn’t get some of the great desserts that usually show up.
So in a quick pivot, I ran to the store and picked up some tamales for a “traditional” SoCal xmas eve dinner.
Sorry, no pics because it was at the last minute and I didn’t actually make anything. Everything was purchased and/or simply heated up. (Salsa & beans) But it was tasty.
