Man, I hope they really don’t double the price of ribs and do BOGO. I am hoping Costco or Meijers does a real sale for my buy of 7-8 racks.

I think you can count on Costco. But Publix does this ALL the time. The people who only buy ribs for Memorial Day or July 4th don't know the difference. Problem for me is that Costco is about a 30 minute drive away.

hoovarmin, think of it as an adventure..
What trips me for a buy is $2.99 or less a pound and that the racks are skinny, no mound of meat on the big end. I can never get the cook even with those racks....

I really want to do this brisket, but my guests are going to be hamburger and hot dog people.

Burgers, dogs, salad. Maybe beans. Maybe pasta salad. Maybe corn. Folks don’t eat as much as they did 20-30 years ago, though. SiL usually brings killer desserts, tho.

I might fire up that brisket anyhow. The hell with what they want, what I want matters, too. Extra is just extra, after all. I already have it, they won’t let me return it, might as well cook it now, same as any other time.

Sounds like you do half of the brisket (point?) for you and grind the flat for brisket burgers. Malicious compliance opp?

Idk. If I do the grind, it will be in the food processor. That just seems like a PITA. It’s actually easier to just cook brisket. The only thing I hate about it is the way the timing works. It seems there is no way to both cook a brisket and get a good night’s sleep.

    Unsure at this point.

It's looking like it MIGHT just be the one daughter's family in town this Memorial Day, other daughter is gone, and no word from our son and his wife. I've got a 10 pound bag of chicken wings in the deep freeze inventory I conducted last week, and one slab each of baby backs, beef back ribs and a 3 bone slab of short ribs. And 3 butts. So unless SWMBO says "hamburgers and hotdogs", I think my plan is a wing cook on the kettle (vortex) or even gasser (this is one thing I still use Grillgrates for), and *MAYBE* smoking some of those ribs on the kamado.

With all the rain and low temps we've had lately, I am mostly hoping the pool temp will get above 80 by next Monday! It slid down to 74 this past week, but yesterday's high of 89 pushed it back to 77. Hoping a couple of sunny warm days, and the solar blanket floating on top, will help it get warm enough.

We went to the beach yesterday and I would have given anything to have a 74 degree pool to jump in when we got back to the house.

hoovarmin got hot I bet! Looks like the ocean temp is over 77 in your neck of the woods, so its getting up there.

Enjoy Pebble! Definitely an awesome experience. I can't remember more than a couple of my shots but the views and the experience are so fresh in my mind and it has been 11 years since I was there.

Beef boneless sirloin tip roast, and chicken on the Pit Barrel.
Burgers or rib-eyes on the grill.

Every year we do a Memorial Day Breakfast Picnic that usually sees around 100-150 people show up. We meet at a park and do it potluck style and everyone brings some sort of breakfast item. In the past we have brought biscuits and gravy, homemade bacon, donuts, and french toast casserole. This year I was thinking of some biscuit breakfast sandwiches with some eggs and sausage patties.

And what would be wrong with McSousa muffins. Sometimes my friends wife gets a bug and makes VicMuffins for breakfast, some work involved but always good, yup, her name is Vicky.

Honestly that would be a real pain in the ass. Thick one, thin one, medium rare, well done, blah blah blah, I’ll feel like a line cook. It’s a lot easier to spin out a dozen burgers and dogs, or a brisket, couple racks of ribs, wings, pork butt, just about anything. I could do it, and make it sing, but do I want to.

THIS would be where I would want to do the sous vide! STEbbq

My lovely bride and I tied the proverbial knot over Memorial Day weekend 2001, so this Sunday will be our 23rd anniversary. Making a four-day of it and will make us a nice dinner on either Friday or Saturday night, depending on how the forecast rain bands turn out, it's still too soon to know which will be the "gap day".

I got us a small Choice chateaubriand from Wild Fork, which was on sale for about $38/pound. They were listed as being in the range 2-2.3 pounds/~1kg, but the one I got is just 1.5lb/675g. That will be just fine for the two of us, so no problem at all. Game plan is to sous vide at 125/52, then sear for an IT no higher than 132/56. Depending on timing, I might do the sous vide a day ahead and get it back to fridge cold, then warm it up on the indirect side of the kettle to get a little smoke from the charcoal and a bit of wood, then sear. Reckon that would be pretty tasty - couldn't hurt, anyway...

Well, the decision was made for me! I was just mentioning to Stacy that I wasn’t sure what to do for Memorial Day BBQ …. She looked at me and said: “Brisket, coleslaw, cheesy potatoes” ….. I said “yes, ma’am” and now I’ll be heading to the butcher tomorrow :-)

ecowper that is what Yvonne likes best too. And it's what we tend to make for parties where I serve pulled pork, as it won't spoil like the mayo based stuff. You got a slaw recipe you really like?
