Going to put it in a pan to catch the juices (so I don't dirty up the brand new OG) and roast a whole chicken and corn on the cob and butter lettuce salad with blue cheese dressing. I'll take dinner to my brother at the nursing home.
Enjoyed reading all the plans for Memorial Day. I wish I lived closer to Johnson City, TN to put flowers on my Uncle Bill's grave. He was lost in the sinking of the USS Wasp. Here's what happened:
USS Wasp (CV-7) was operating some 150 nautical miles southeast of San Cristobal Island on 15 Sept 1942 when she sighted torpedo wakes coming straight for her. Wasp was struck by three torpedoes fired from Japanese submarine I-19 which hit the vicinity of the ship's gasoline and magazines. Wasp was rocked by several catastrophic explosions over the next few minutes and it quickly became apparent that her condition was beyond saving. The order to abandon ship was given ten minutes after the torpedoes hit. Wasp sank with the loss of 193 dead and 366 wounded.

Well, feeling pretty good today and tired of sitting! So ribeyes on the kettle are planned for today! Gonna use some Fogo lump for the first time for the last two ribeyes I cut from a primal a while back. Not exactly sure on sides, probably sweet potatoes and brussels.

Well as I posted early this morning, the brisket went on the Recteq running at 275 at 5:15 AM. Hit the stall around 10:00 and I wrapped in foil. It was done at about 1:30! That surprised me. Anyway I held it in my inside oven on the “keep warm” setting until service at a little after 4:00 PM. It was very good. I wouldn’t say outstanding. I can’t really put my finger on just why it wasn’t. Again, very good. Just didn’t blow anyone away. 🤷♂️
I have photos all along the way EXCEPT the finished product. I opened up the foil, turned and walked 4 steps to get my phone, and my son was already cutting into it with gusto and nibbling along the way. 🙄
So sorry folks. It really happened and was good especially considering I really don’t do brisket and hadn’t done one in years.

A Wild Fork just opened near us (maybe even today). Went in, looked around, impressed. Had other groceries in car, so just grabbed a frozen bag of tots and a frozen parsley.
Their computer was down. Even though we were paying cash, the clerk couldn't take the money because there wasn't a way of logging the order.
He gave them to us, no charge.

Finally posting my Memorial Day cook. Couple racks of ribs and I did them Barbs-B-Q style with lime zest. LA Pork Butt, Troutman, 58limited and Mosca would remember this little nuance from our Texas Meat-up. Ribs were really, really good. Tender, flavors married well with the pork and that little acidic kick with the zest was fantastic.

I didn’t have their ribs. But I think I will give a try on my next rib cook.

LA Pork Butt Oh you missed out. The lime zest was the biggest trick I came away with from Texas.
