    Backyard is totally destroyed. I pulled my back out getting things ready for the guys. I picked up a rack of St. Louie’s for $1.99 at Krogers.

    Pulled pork carnitas on the flat top. We take the meat and make burgers.

    I will smoke it sometime this week and let it rip on the griddle, add cheese, pickled onions all the other fiiiiixins'

    Well my son just invited he and his family over to our house for Monday. The conversation went like this:
    him: Do you and mom have any plans for Memorial Day?
    me: Nope. No plans.
    him: You should do a brisket and we’ll come over. Mom will love seeing the kids.
    me: 🤦‍♂️

    So it’s off to Costco in a few minutes to see what they have left. Otherwise, it’s an emergency order to Wild Fork. 🤷‍♂️

      I love it! That is how it goes with us too.

      My oldest daughter called me on her way to work this morning to inform me they would be coming to hang out "any time over the weekend when the weather is nice". I told her we had been planning to go to a hot air balloon festival if the weather was nice Saturday morning or Sunday afternoon...

      My parents and mother in law in the meantime may be showing up Monday. So I may have multiple cookouts...

    Well, my Memorial Day weekend may be shaping up for multiple cooks on different days!

    One daughter's family (with the 2 oldest grandkids) is heading to the beach all weekend. My son told me he is going camping this weekend, but MAY show up Monday. I think my wife told my parents and her mom to come over Monday. Then today, I get a conversation similar to Jfrosty27 - my oldest daughter called me on her way to work this morning to tell me that she would show up "some time" over the weekend to hang out when the weather is nice. And that the weather didn't look as nice for Monday. I told her in turn that we had planned to go see a hot air balloon festival in Decatur on Saturday.

    So I guess I might end up cooking something simple Sunday - maybe grill the 10 pound bag of chicken wings in the freezer - and something else on Monday. I am pondering for Monday pulling out of the freezer a butt (overnight smoke), a pork loin done porchetta style (found a 5 pound half pork loin in the deep freeze), or buying some chickens and splitting them, and grilling with the Alabama white sauce... right now I am leaning towards split chickens.

      In fact I was going to do a roto cook until my son picked brisket. 🙄

      Jfrosty27 rotisserie cooked brisket maybe? I think that could happen on my kettle, with the rotisserie ring and slow 'n sear... odds are though that the meat would spin out to far into the direct heat above the charcoal though...

    Well, I posted earlier that I was going to do ribs. But I changed my mind.

    My race buddy and I were holding out for tickets, but it looks like we're not going. So I invited him and other friends over for ribs while we listen to the race.

    But I cooked ribs last weekend. And jfmorris got me to thinking about the doldrums of pork butt. But I can make other delicious things out of pork butt, and I decided this Sunday will be all about brats a.k.a. Track Dogs!

    I've also been looking into creating my own Dijon mustard for the brats.

    The other track food I might want to cook is the very local Indiana pork tenderloin sandwich. Might make that too.

    Saluting those who won't be at the track or at any of our gatherings. Memorial Day.

      barelfly you and I must be about the same age because I was in Indiana listening to the same races you were watching on TV. Rick Mears was my superhero I admired as a kid.

      What a race that was! I haven’t watched the Indy 500 in years…but since I’m laid up on the couch, I had it on today and couldn’t believe all the early cautions/wrecks. Then as the race went on to see the back and forth between the top 3-4 cars! That last lap was 🔥!!!

      Hope you enjoyed it and thanks for bringing the race up!

    At Rimrock Lake cabin, 2 sets of kids, 4 grandkids. USDA Prime brisket, wet aged 90 days. Maybe a cigar, in hiding.

      Costco brisket went on at 1 am, came off at 10am, eaten, mostly, at 2pm. No wrap during stall. Double wrapped, faux cambro when done, and about 1 hour in oven. $4.20/lb. It was, if I do say so myself, outstanding. All agreed. Perhaps my best.

      Believe I have been underestimating the resting importance. Preheat cooler with hot water, double wrap, towels, leave it alone.

    I had not given it any thought until your post. Thanks for the reminder. I’ve got Osso Bucco, chuck roasts, quail, halibut, branzino, pork belly, and chicken in the freezer. Maybe I’ll make some pulled chuck for sandwiches…or tacos.

      I found some Porter Road osso bucco in the bottom of my chest freezer. That stuff is gold when braised in the dutch oven with a sauce and some veggies. Not a traditional Memorial Day cook though!

Restaurant dinner Friday night and Saturday night, someone else’s bbq Sunday and then home on Monday, so that’s, let me see, nothing! Absolutely friggin’ nut’n’.     Scrolling through this thread looking for inspiration at the moment.

    It's a little complicated this year. Our daughter is flying into BNA on Friday night (4 hr round trip to go pick her up). Then we're all going to my niece's wedding on Saturday (5 hr round trip). Daughter flies back out on Monday night, so make that trip again.

    So I'm thinking smashburgers on the griddle around lunchtime. But first I need some time at home when it's not raining/storming to clean up the mess in the griddle left behind by mice! I caught the little #%$&@* red handed in one of the drawers a couple of days ago. I was as shocked as he was, and I couldn't decide fast enough whether I really wanted to grab him with my bare hand and he eventually ran away.

      Looks like I'll be out of town again. So nothing here. I made some passable ribs a couple weeks ago in my mom's oven, I may do some beef ribs in her slow cooker.

        Memorial Day weekend, yes. Going to smoke some pork ribs either Saturday or Sunday (or Monday), haven't gotten the day approval from the boss yet. bbqLuv got me drooling over his 3-2-1 ribs.
