    We're planning red, white, and blue. Red jello. White buns with hot dogs and brats. Blue (purple) potatoes - trying them steamed to keep the color.

    (And broccoli for some fiber and apple bars for some sweet)

          My summer grill sausage...Salmorigio Chicken..(lemon,garlic,fresh parsley)....A 3.5lb flat angus brisket...baked beans with my homemade bacon ends...

            SonOfAButcher i would be much obliged if you felt like sharing a recipe….you had me at reggiano and fennel seed. At my old job, we made a sausage that had a similar flavor profile. I called it "pizza sausage" because it tasted like pizza!

            I will surely share this recipe...Here we go..
            4# coarse ground pork
            2TBS salt. I use sea salt.
            2TBS fennel seed
            1TBS black pepper
            8oz grated Reggiano
            1 8oz can no salt tomato sauce
            I mix the dry ingredients except the cheese in the tomato sauce before mixing it in the ground pork.
            I use 28-30mm sheep casings for a thin sausage..It will crisp up nicely when cooked..

              Ribs and pork belly is on the WSM! Smoke is rolling, temp is about 235F. It’s clear and 72F outside. I’ve got a cigar going. Friends will be over about 5 for pork belly appetizer and then dinner around 6:30. They are bringing all the sides and beer!

              What could be better? Happy Independence Day if you are in the US (and even if you aren’t) and if you happen to be British, I guess you can wish us a Happy Treason Day! ;-)

                  Yep, I normally would go out to the reservation. My neighbor and I used to put on the greatest fireworks show in Maple Valley until the council banned fireworks in the city limits.

                  ecowper , I want to say that we moved there in 1996 or 1997. I graduated from Kingwood in 2000 and was there until 2003 when I joined the Army.

                  RickyBobby I was curious because I was the Army Recruiter for Kentridge and Tahoma from 94 to 96 ..... later, after retiring from Army, I liked it here enough to permanently move and settle in Maple Valley.

                Pork belly is getting nicely glazed now, after it got some good color and bark. Ribs are starting to look pretty good, 3 hours in on them.

                  Beef cheeks update. I smoked them for four hours last night and then covered them with tallow. Into the oven at 200 for 17 hours. Very tender. Wish they were more Smokey. First pick is just out of the oven.
