I was ponderin' this the other day...What if eggs were never edible, or were terrible tastin', or poisonous, whatever, and never were a common part of our diet? Then since my ponderin' hat was already on and hair was done messed up, I happened upon a further ponder...
What would recipes use that so commonly mandate eggs now? What would we have done with baking and such, batters and coatings, noodles, French toast, egg wash, etc, if eggs ne'er were an option? And can we do that, whatever that may be, now?
Surely those in the vegan community have this figured out. Maybe I am simply an ignorant fella in this regard (well, I know I am) and it's rather common knowledge, but if whatever this option is, is viable, why do we still use eggs in cooking?

I honestly thought that meat and eggs have been the proper human diet for a very very long time…

A lot of baking recipes allow for one quarter cup of yogurt to substitute for up to three eggs. I plan on trying that out this weekend on a cake. Good excuse to bake myself a treat...all in the name of research

What's interesting is the price at Harris Teeter for Eggland's Best hard boiled bagged eggs hasn't gone up at all. I can get a bag of six or their store brand for under $3 any day of the week. The price bounces back between the two. I go through 2-3 packs a week for breakfast at work, plus yogurt and some low sugar granola. Egg prices definitely won't send me to my local BK attorney to file a chapter 7 or 13.

Bogy yes correct, $6 a dozen. These are cooked, peeled and ready to eat. Compared to over $6 a dozen here locally, not ready to eat (unless you do it Rocky style, raw).

I was at a restaurant in Conyers, GA the other day. Little mom and pop place. They had a notice on the door that said they were charging a 49 cent surcharge per egg right now. Betty's Home Cooking. Pretty good food.

The eggs I normally buy have now hit $6.50/dz, so I dropped down to the cheapest ones. $3.98/dz. Ethen Chlebowski's "Are Expensive Eggs Worth It?" (https://www.youtube.com/watch?v=0YY7K7Xa5rE) video from last year convinced me than an egg is an egg is an egg.
In other words, buy on price.
Still, it was weird buying white eggs. (I've been buying brown eggs for years now.) Also, these cheaper eggs are about 10-15% smaller than the eggs I normally buy (I didn't realize that until I got them home).
Also....lol...these eggs came in a styrofoam container rather than the cardboard one. I feel like I bought a McBLT. (Remember those?)

From what I read an agreement has been reached with Turkey where they will export 15 tons of eggs to the US between now and July. I have also read that Canada limits the farm size to 25000 birds and if the flu is detected they quarantine rather than cull and that works well for them due to the reduced size of their flocks.
I think there is alot of messages here for the way we handle food production.

I was in Publix yesterday and I dozen Large eggs were $4.29. Dozen Jumbo $5.25. What accounts for the great disparity in pricing from state to state?
