Here's a pic of the last chunk that was left, more pink than red. I probably should have started the sear a minute, maybe two minutes earlier.

That's the only pic that I have. When they came off the grill and we cut into them we both ripped into them like starving wolverines. At the last minute I remembered to save a chunk for a picture.

ribeyeguy that ain't horrible looking, or something! How about taste? Too much smoke, or enough, or not enough?

Very nice. How was the flavor?

As far as the flavor goes, they were amazing. Definitely had a pretty deep smoke taste but not so much that it overpowered the beef. My wife always says that there's no such thing as too much smoke and her assessment was that it was a perfect blend of beef and smoke flavor. It's something that without question I'll try again. Once again, I shake my head in amazement at what can be done with the SnS.

Its the opposite at my house. My wife wants little or no smoke. Glad they turned out for you!

David Parrish my wife's more like yours, she gets bored with smoke much quicker than I do. ribeyeguy Wow, special woman you have!

My wife's the same. The less smoke flavor the better.
Ain't that crazy how much we love the smoke and our (better halves) don't.
              ribeyeguy great job.

I believe Ernest has done some all wood cooks as well. Nice job, thanks for taking us on the journey ribeyeguy. I've done it before too, but found it to be not as fun as running my stickburner, and not as easy as using briquets with some chunks...so I've stuck to the traditional uses I guess.

It was fun and definitely worthwhile but it involved way too much smoke and meat monitoring. I'll probably try it again though because I'm already thinking about ways that it could be tweaked. It'd be interesting to try a taste test, side by side with a true stick burner.

I only do all wood with hot cooks such as chicken or baking.

ribeyeguy Too long for a comment to your #38.1 above...
But that would be fun, side by sides are always fun and educational. I did one some time ago between my stickburner and the SnS (traditional use, not all wood SnS) you can find it here if you're interested.

Just read the whole thread and my guess was wrong, I thought A was the SnS. It's an interesting thread though, it'd be neat to see more side by sides.
