Our eclectic Fourth fare.
Prime NY Strip (foreground) and choice ribeye steaks.
Chicken empanadas.
Ham croquettes.
Obligatory hot dogs to appease Panhead John .
Mari Jo showing off the entire spread. Ham croquettes, chicken empanadas, steaks, hot dogs, deviled eggs, tropical fruit salad, mixed greens salad, cherry tomatoes.
Store bought fruit bomb cake.
Home made ice cream sandwich cake. Kudos to the grand kids for that.
Time to hide the scales and hibernate until I lose 10 lbs.

Jim White It was supposed to be a tapas homage to all the wonderful Spanish influenced food we enjoyed while in FL. I chose to make the croquettes after having some Serrano ham croquettes at Bulla in Tampa. Most grocery stores up here can’t even spell Serrano so I had to use Prosciutto. Go figure. At any rate, when four hungry teenagers descend on your soirée, you better break out the hot dogs or the adults will go hungry. I just didn’t have the heart to cut the dogs up into tapas. 🙄

"Beer is proof that God loves us and wants us to be happy." ~Benjamin Franklin
Taking the "raw" ingredients from my post above ( https://pitmaster.amazingribs.com/fo...65#post1447765 ), I present:
Chili cheese dogs and a chili cheese burger with red Hatch chili.

I’ve decided to post my hot dog cook from last night, not just as a visual feast for your eyes,
but also as a learning tool for the hot dog challenged members of The Pit, several of whom so blatantly and willingly violated the rules. One of the members [yeah you WayneT ] even tried to skirt the rules by inserting a lame hot dog pic in with his lovely wife’s feast that SHE prepared, while this said member was probably lounging around in his underwear drinking beer. So, to help these rule breaking varmints, who must not know how to prepare a hot dog, I will present you with an utterly fascinating step by step tutorial!
STEP 1- Prepare your sides and fixings
STEP 2- Start construction of hot dog with your favorite condiment
Step 3- Layer your fixings one at a time, bacon in this case
Step 4- Insert hot dog
Step 5- Place cheese and/or toppings next
Step 6- Place chili [NO BEANS] on top of dog as your final step
There……that’s all there is to it. Feel free to prepare hot dogs to your liking. My chili cheese dog is but one variation of this tasty American classic. In conclusion, the next cook-off/smackdown or whatever, will come with serious consequences for any and all rule breakers who decide to go rogue. As an example of how serious these consequences can be, in this post…..I didn’t give a single “Like” to anyone who posted something besides a burger or hot dog!Last edited by Panhead John; July 5, 2023, 09:03 AM.

Man! I am used to cooking on NG. This new LP did not allow for me to take any, in the process, pics. Altogether, I am going to guess, 2 dzn burgers. 10 brats n Metts each. 10 or 12 hotdogs(not sure how many are in a pkg these days). Did two pork shoulders on the new Kamado and a pot of Bonesy’s beans. About 30 guests total.
A couple days under Kim’s direction, to whip things into shape and here we go.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.

After seeing SheilaAnn's yummy little sliders, I decided to post a little cook we did over the weekend with our attempt at some sliders. The hot dog cook we had planned with some sausages was aborted so I made these little guys last minute. It's once again some of the leftover ground Akaushi brisket made into tasty little burgers.
