I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Smash burgers with onions, green chile and pepperjack cheese. It's health food though, because it's on whole wheat buns.
Side of summer squash with some balsamic.
In the new outdoor kitchen and dining area, of course.
The dogs have even already learned the manners for being there while we eat. Nicely just chilling and not with their faces in our food.

Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.
All right, since I can't depend on the weather I did my cook this evening. I went off into an area new to me. Certainty not a traditional 4th cook.
Happy 4th! Today I did something a bit different. I took 2 5 oz bacon wrapped filets and took the bacon off. Sliced the steaks and bacon. Put them in the freezer for 30 minutes. Then I grinded them up. Took the meat and in a bowl added SPG, bread crumbs and marinara sauce and an egg put in the fridge for a couple of hours to allow the seasonings too set in and blend. I formed the loaf and coated with marinara sauce. I placed on the gas grill. Placed a smoke box with hickory chips. Set up indirect for a temperature of 300. I took about an hour. I did some griddled potatos. The taste of the meatloaf was great. The texture of the beef was creamy. I know that sounds weird, it had a smoothness to it. I would definitely repeat.

Great job! When I’ve done bacon wrapped dogs, the parts of the dog not covered with bacon always burn before they’re done. Got any tips?

These are 1/4 lb. wrapped in thick cut bacon and in a wet marinade and the marinade burns if it doesn't dry up so I start over indirect heat so the bacon can render and then just try and crisp 'em up as best I can. I also cook 'em on the flattop on a med-low heat sometimes. If you're wrapping your own dogs use a regular cut bacon and maybe even par-cook it before wrapping.

“Woke” Texas Red. Added a pack of Rancho Gordo Domingo Rojo beans and chopped roasted Hatch chiles.

Purc I’d seen that jalapeño bacon before, recently, but this was my first time to buy it. It was…..ok. Don’t get me wrong, it was BACON! But, I wouldn’t buy it again. Hope this makes you feel better by not having it sold near you…..😂

Panhead John the corn is pretty simple. A little butter in a fry pan, onion, pepper, corn, S&P, Parsley, and some Elote Seasoning or Chili Powder. I've added diced zucchini before too. Sometime I'm going to try a little whipped cream cheese too. Fresh or frozen corn works.
