        Love a croque madam!

      I got requested to do pulled pork for Mother's Day, so I did. I had a 10lb butt which I cut in 2 and trimmed. Trimmed weight was ~9.5 lbs. Dry brined on Friday and rubbed with MMD last night. Cooked on my COS with hickory splits and just enough lump to start and maintain the coal bed. It was hands down the best I ever made due to the all-wood cook. I sauced some for tonight's dinner and tomorrow's lunch because that's how we like it. The bulk of it is still unsauced and will be broken up and vac sealed and frozen.

        Love it. Making me hungry here. And it never occurred to me to use my Kitchenaid mixer to shred pulled pork - I've been doing it the hard way. Live and learn.

        Used the Kitchenaid the last time we had pulled pork. Didn't come out as nice as yours, but it was my first time and I'll just try a few more times and get better. Yours looks great.

      You know that feeling - "There's something I'm supposed to do, but i don't remember what." That was me on Friday night NOT prepping and dry brining the chicken.
      Oh well, Saturday morning I remembered and got the job done. After splitting the bird in half, I did a light EVOO rub, the salt, then dry rub.
      By that time it was late morning, and I realized I was not going to fast until dinner. The chicken was for dinner with the boys, but I was going to need lunch. I checked the freezer and pulled out a 12 oz. filet mignon that I cut from a full Costco tenderloin last year. Tossed it in the sous vide, then headed out to run some errands.
      I bought some yellow potatoes at Trader Joes, and when I got them home, they were starting to go bad. So I cooked the full 3 pounds.
      Lunch was steak and potatoes.
      Dinner was chicken, rice, asparagus, and mushrooms.
      Oh, and I haven't used the LSG grill pan in a while, so I used that for the chicken and veggies, with fresh rosemary sprigs for smoke.

      SWMBO requested Kenji's Pan Seared and Oven Roasted Chicken with a Fine Herb and Wine Sauce for Mothers' Day and I obeyed. I also baked some sandwich bread and rolls.

      My long-awaited rematch with baby back ribs, vindicating myself from my very first smoke Agonizingly detailed account of the proceedings right here. One of the best things I've done yet. Served with steamed broccoli and corn on the cob. Ain't skeered of no baby back ribs, nosirreebob.

        Caught a couple largemouth out of the back pond. One 3.5lbs and the other 2lbs according to my scales. Largemouth bass with a brown butter, lemon, parsley sauce.

          Man, if my mom knew about this she would move into your house. She loves to fish, and she ain't catching and releasing. Bad part is she lives in landlocked Atlanta area. I bring here here as much as I can.

          Beef ribs from Costco. First time I ever made them. The front two were done on the Grilla and the back three on the WSM. Fantastic. Did the beef rub I bought from Grilla. Very good.

            30 day dry aged NY strip (from the Creekstone Farms strip roast sale in March). I've had bad luck with NY strips but this one is perfectly tender and juicy. Served with roasted green beans and cheese ravioli with home made Alfredo sauce. I added some finely diced Benton's ham to the Alfredo sauce.

            My mothers day rib cook on the Weber turned out very happy indeed. Papa and the boys left for a hike today and I had some project time 😁 Simple meal of cowboy beans, ribs and an extra dry sake style saison ale
