I got requested to do pulled pork for Mother's Day, so I did. I had a 10lb butt which I cut in 2 and trimmed. Trimmed weight was ~9.5 lbs. Dry brined on Friday and rubbed with MMD last night. Cooked on my COS with hickory splits and just enough lump to start and maintain the coal bed. It was hands down the best I ever made due to the all-wood cook. I sauced some for tonight's dinner and tomorrow's lunch because that's how we like it. The bulk of it is still unsauced and will be broken up and vac sealed and frozen.
Barbara made sauteed zucchini for a side.

You know that feeling - "There's something I'm supposed to do, but i don't remember what." That was me on Friday night NOT prepping and dry brining the chicken.
Oh well, Saturday morning I remembered and got the job done. After splitting the bird in half, I did a light EVOO rub, the salt, then dry rub.
By that time it was late morning, and I realized I was not going to fast until dinner. The chicken was for dinner with the boys, but I was going to need lunch. I checked the freezer and pulled out a 12 oz. filet mignon that I cut from a full Costco tenderloin last year. Tossed it in the sous vide, then headed out to run some errands.
I bought some yellow potatoes at Trader Joes, and when I got them home, they were starting to go bad. So I cooked the full 3 pounds.
Lunch was steak and potatoes.
Dinner was chicken, rice, asparagus, and mushrooms.
Oh, and I haven't used the LSG grill pan in a while, so I used that for the chicken and veggies, with fresh rosemary sprigs for smoke.
