There are those who can turn a portobello into a great steak substitute. I think you’re on the right track. I can’t help with a recipe because my portobello has cheese on it.
Be careful with that. I did one, thinking it would be amazing. It was way way overly smoky, and I don't think I have EVER said that about anything else that came off the grill or smoker... Doesn't take much smoke, as the cauliflower seems to soak it up.
If I do cauliflower on the grill again, it will be without smoke, at least, no added smoking wood.

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.
A whole cauliflower head with curry is good. Brush on a thin coating of oil, and then dust it all with curry powder. On the grill/smoker for 30-40 minutes at 180 deg C / 360 deg F. Serve with a Greek yoghurt honey dip.
Another favorite is grilling a whole butternut directly in the hot coals. Rotate 1/4 turn every 10 minutes, for a total of 40 minutes. Cut off the black charred surface and cube up in 1” cubes. Drizzle plenty of Parmesan (if they eat cheese), some salt and enjoy as a warm snack.
Throw on some cherry tomatoes when smoking your protein and cook until they turn to delicious raison looking things. Toss them into a salad. If it's meatless they want then that's what they getting ... a salad ;-)

Cauliflower steaks or a head of clauliflower - multiple ways can be done as mentioned above. The portobello is a great play as well as the kabobs. Onion, mushroom, peppers, zucchini and squash.
As for the cauliflower, I’ve even made tacos with grilled cauliflower and an adobo sauce, added in some pineapple. It was outstanding! A cauliflower al pastor if you will.
