One thing I make for my meatless friends is marinated green beans, red bell peppers, and tofu. I usually used an orange sesame marinade (can't remember the brand) or something similar. Marinate for about an hour, then into the grill basket. Sometimes I added Viidalla onion. At larger parties I had a separate grill for the vegetarians/vegans and let them manage their own food, usually Amy's bean burgers and similar. Some were particular enough that they wanted to cook their own.

If I am sportin a stuffy nose, can't breath, head cold. I will grab any onion on hand and eat it like an apple. Generally handles it. Do not usually get all the way thru it.

I might have to try that.
Almost my sole purpose for eating the occasional Liverwurst sandwich is because it's an excuse to load up a sandwich with some thick slices of onion.
Speaking of which, it's been awhile since I had some liverwurst. Just added it to the grocery list

I have one vegan and another who is vegetarian in the extended family so I try to accommodate them if it isn’t too much of a hassle. My goto is a veggie paella using grilled vegetables. However one told me about attending a conference in Raleigh and his gang wanted BBQ from a well known place so he went and was surprised there was a grilled tofu dish so he ordered it and loved it. So I just picked a recipe from the internet, pressed the heck out of the tofu, coated it with rub and grilled away adding some sauce near the end. Both loved it and I might do it again sometime for them. However the pressing took time and after slicing I had leftover tofu which I tossed, and I hate wasting food.

portobello with some olive oil, chopped garlic, a little mustard and some Worcestershire sauce or teriyaki on the grill

Did you ask them what they like and don’t like? Or what they cook out themselves, when they cook outdoors?

My first thought was Rancho Gordo. Get a bean that’s distinctive, that they don’t usually see; Yellow Eye, maybe. I’d also think summer squash with peppers, mushrooms, onions, and garlic, roasted with olive oil and seasoned with Italian seasonings. That’s pretty much a chop/chop/chop, season, roast, very easy and very good. Or Peruvian potatoes; get those mixed colored fingerlings, and some mixed colored baby potatoes, and make them with roasted red pepper, and whip up a huancaina sauce. (Very easy, you can get both hot and mild aji paste in most grocery stores in the ethnic food aisle. Or roast and purée a yellow bell pepper; not the same, but good anyhow.)

I cook veggies seasoned and wrapped in foil. I googled meatless BBQ and this came up. I guess some people cook veggies on the pit and call it BBQ. But we all know real BBQ is meat.
        I hope this helps.

Beyond Burgers/ Impossible Burger could be an option. I kinda think Impossible burgers taste a little better than Beyond beef. Tofu is also good grilled and can take on many different flavors.

Grilled and smoked baba ganoush is great. Portobello can be burgers like these I made last week below. This recipe from the free site is great as well.

jjdbike, my attempt at bbq tofu inspired by a foodie show The Best Thing I Ever Ate:

Has anyone ever tried, or tried to make BBQ tofu? The reason I ask is because I saw an episode of "The Best Thing I Ever Ate" a while back (s8e11), with Aaron Sanchez at the Redbird restaurant in Los Angles. Aaron talk about this smoked BBQ tofu. The way he described it definitely caught my attention. And I decided

Can you please tell me how you do your smoked cauliflower? Some one in this thread said that it sucks up a lot smoke and smoke is overwhelming. Obviously you didn’t find that to be true.
I think I’ll do the smoked cauliflower, grill some portablas and some fruit, pineapple, peaches & watermelon.
Any hints on how to do the fruit?

The cauliflower is from a Chris Kimbell recipe below. I've made it numerous times. You don't have to provide a lot of smoke. Use a small piece of fruitwood just to get some degree of smokiness, the charcoal will do the rest.

Our Roasted Whole Cauliflower with Feta is an easy, great recipe for entertaining because we let simple ingredients do the heavy lifting.

As for fruit it's super simple, just cut open, brush on a little oil (optional) and grill. Just watch that you don't overcook or dry out.
