    The meat is Sopressata sausage. Uncooked, it is really gamey and off-putting. I rendered some of the fat, indirect, in the Jumbo Joe and it's absolutely wonderful. As for the Bloody Mary itself, I created my own recipe for the mix and I steep the vodka in peppers for a couple of days before mixing a batch. This recipe produces a LOT.

          Pic of my 2 smokers and Pics of a brisket I did last weekend. Never used a smoker before and never ever cooked a brisket. Smoked it to 195 about 5 hrs pulled wrapped it in foil after injecting it with liquid hickory put back on grill for another 90 min pulled it at 225 wrapped again in towel and put in cooler until temp got to 170. cut and enjoyed the most wonderful moist piece of meat ever. Wifes words.

ID:	838482 We are day sitting the granddaughters Three days a week while our son and DIL work from home. They drop the kids off so they can actually get some work done. Man we’re bushed by the time they are picked up! But at least we get some housework done. 🤣
