Leftover Tri-Tip burrito. Cut the trip tip into small pieces and put in sauce for 30 minutes. Sauce - 1/4 cup Lefty O'Doul's Bloody Mary Mix, 1/8 cup Lefty O'Doul's lime margarita mix, 1 Tbs oregano, 1 Tbs Soy Sauce, 1 tsp Ancho Chili spice, 1 tsp red chili powder, 1/2 tsp garlic powder, 1/2 tsp cumin - blend sauce so that it is thick. Mix meat with sauce. Burrito made with Mexican rice, refried beans (with Mexican cheese cooked in) and cilantro. After cooking the meat at high temp to evaporate the juices from the meat mix, I put the meat to the side, put the burner on low and put the tortilla on the bottom of the pan to soak up leftover juice/spice from the pan. I assemble the burrito in the pan. (for some reason the photos got out of order. Photo 2 is the meat sitting in the sauce and photo 1 is the meat cooking)

Leftover smoked meat does seem to lend itself to Mexican recipes.

Same Tri-Tip. Garlic, cheese mashed potatoes underneath Tri-Tip cooked in gravy. Potatoes cooked soft so that it blends nicely. No knife used in the eating of this.

Leftover tri-tip in home BBQ sauce (a bit spicy) with fried eggs on top. Had it for dinner last night because...well...I just couldn't wait for today's breakfast.

That looks delicious! How did the dough hold up to it?

The dough actually held up fairly well. The crust was a bit crunchy, but underneath did well

Love the leftover thread. Same tri-tip, marinated in my Asada sauce, cooked on the Santa Maria fajita style but made into a burrito. Love both sides of Grillgrates.

Last of the week's tri-tip. Last night's fajita meat on a relleno (restaurant bought) with rice and eggs.

Tri-Tip, onion, bell pepper, cheddar cheese omelette. The dark on the outside is not from burning/drying. It's from the soy sauce/butter/hot sauce mixture I used as I reheated the meat.

Brisket smoked two weeks ago and extra was frozen in small chunks. Slowly reheated in the microwave today. It was as good as the day I cooked it. Tomatoes and mayo are fresh . The house smells wonderful.

tbob4 thank you. I mix mayo and butter and spread it on toast to brown it (grilled cheese), and also dip fries in it!

Your food always looks excellent and you have some great combinations. As far as the mayo only good in tarter sauce lol

So maybe not the picture you truly want but this is leftover from lunch today. It is a very simple soup it is tomatoes onion cheddar cheese and a jalapeño with a little tomato paste and some vegetable stock , very good. Thinking on incorporating into a base for some bbq sauce
