    Okay, I rummaged through my freezer looking for something to make my Navajo Green chili:

    That is 3.75lbs of organic pork shoulder. It gets stewed with Green Hatch chiles and other assorted chili goodies!

    The last time I remember making this would be maybe 40 years ago! The reason I distinctly remember it? The recipe called for “2 16oz cans chopped green chiles”, which we couldn’t find in a supermarket in Pittsburgh in 1980. So we used 2 lbs of chopped fresh jalapeños.

    It was… spicy.

    This time I have the Hatch!

      Looks like I am gonna miss this cook. I didn’t plan my vacation very well so next weekend I have back to back overnight / double shifts Friday and Saturday then a 12 hour on Sunday.
      I will be watching and wish all the competitors good luck!

          Hopefully I'll get a chance to make some chili sometime. This weekend is getting complicated with a son and grandkids coming to see us, a dinner invitation to one daughter when her sister is supposed to be staying with her while she attends a conference, my commitment to smoke some briskets for a church dinner, and to top things off, a positive test for our son in law with the disease which must not be named .

          They had a chili cook-off at church last week. The guy who got first place made it from a Ram (adult male sheep) he shot for somebody because it was attacking everything, and somebody accidentally put barbecue sauce in it.

          I only ate some of the pulled chicken chili and it was pretty dang good.

            CaptainMike it's never been easier to fly a RC jet both in cost and actual lower skill required thanks to technology... or ya could just pay for a ride and tick that off your list.... a few more years and one of them rides with mr Bezos or Musk will knock out the space dream You already accomplished the 2 hardest things

          I’d really like to reprise my 3 duck chili for this cook off but, despite how amazing it was, it seems rather anti-climactic now. I’ll have to do some additional research.

            I’m in with Texas Jailhouse Chili. None of the updated imposter versions either from Texas Monthly and other places. Backstory with the recipe later. Only ingredients: meat, chilies, spices. Not to everybody’s taste, but a few of y’all might end up incarcerated🤣.

            Well, making a simple pot of red this evening (evening sure came fast today!) so I'll have to put my thinking cap on and come up with something for next weekend. Now, where the h-e-double hockey sticks is my thinking cap...?

                  Clawbear57 I don't know what is wrong with some people. They're called "Chili Beans" right on the label. They wouldn't call'em that if that isn't how you were supposed to use them!

                Good morning from St. Augustine by way of New Hampshire, Massachusetts, Connecticut and most important, Washington, PA (1966-86)!

                Western PA: Yinz...I'm a long-time user/follower of the Rib Shack and Bat(man) Sauce! Used to go there (multiple Monongahela River area locations) with college dates (it was a moveable feast due to raids and tormenting). Three vats going with thin "seasoned and dry" pork chops BBQ'n atop bed springs atop a railroad tie fire pit (cough, cough) under open air shed/lean-to, with a new 8' 2" x 4" railing nailed between posts. Napkins, day-old Wonder Bread, paper plates and if you were quiet or did not bring your own beverage, a semi-cool Bud would appear to guzzle. Laughter! Joy! Roughing it! College "preppies" regaling in this special and humble but tasty environment. Put us all on equal ground...if you could still stand up sober and the fire in your mouth still penetrated your stomach or had subsided!

                Want to thank MOSCA for retrieving the forgotten recipe for Bat(man) Sauce that appeared a while back and actually attracted me to this site. His experiences at The Rib Shack parallel mine...and perhaps I stepped in his tracks on occasion. One of the highlights of my simple life...that I still recall to this day! Danny, Fred, TR, Wally, Bits, Clucky, Al, Steinman, Spence, Billy, Back, Bubba, Hergy, and so many others frequented The Rib Shack. New friend here, Burns N'at from Mt. Pleasant, also visited/ate/drank with Beans in tow!

                Yes...Stello brand Bat Sauce is "sweet" and only hints at what was!

                I'm on this site to learn recipes, techniques and hear stories/exaggerated and real!
