I really want to make some beef ribs. But the prices are so high, I can only conclude that I'm not looking at the same stuff that everyone I see on the internet is making.
Costco has these beef ribs in vacuum packing, but it's like $14/lb and each package is about 20 lbs. Are you guys seriously spending $250 on a single cook? Is it just a special occasion kind of thing, or is there another cut entirely when we're talking about beef ribs. For comparison, their prime brisket packers are currently in the $5/lb range so a whole brisket ends up in the $60-90 range..
