SWMBO and I both prefer smoke in moderation ... and not at all in or on some things like:
    • gravy of any kind
    • beverages
    • most veggies (grilled, yes ... but smoked, no)
    • burgers, brats, and dogs ... other than from fat dripping onto the heat source
    • thin cuts of beef or pork that really deserve to be grilled hot'n fast
Like Huskee said (in the wrong channel, apparently ), "it gets old if it's on everything".

I think this is a great question. For me when I want smoke it is with brisket, butts, chicken (sometimes), ribs and chucks. Other foods that I like to prepare not so much. When I am smoking meats as mentioned here, the smoke can be the focus but for other foods I do not want anything stealing the show.

Like several others have said, I'm not sure I really care for smoked cheese other than the stuff that comes smoked already like provolone. I haven't committed to the dislike yet as I've only tried it myself once, but wasn't impressed and definitely didn't like just eating slices of it plain or on a cracker. Also didn't like what it did to Mac N Cheese. It was OK melted on things like burgers.

I grill more than I smoke and really don't have desires to make or try smoked cocktails, oils, etc. At the same time, I definitely like my smoked ribs, brisket, chuckies, pulled pork, etc. I just don't need that part of what makes them BBQ included in everything else.

Me and an old fireman buddy made a bunch of large smoked ice cubes for whiskey tasting at one of our big 4th of July gettogethers. Everyone loved them but us firefighters, we all agreed they tasted like structure fire overhaul smells. And like overhauling a structure fire they were just nasty.

I have oversmoked chicken before, that's not very nice either.

I did double smoke a store-bought ham yesterday and it got REALLY smoked. I glazed it with a jalapeno honey glaze and it was fantastic!! I will do this again and take/post pics then.

Only thing I haven’t liked is gravy. Every thanksgiving I do two birds - one smoked and one oven (for the "purists"). First year I made gravy from drippings of both birds. Everyone loved the smoked bird, but no one liked the smoked gravy.

Well, sometimes my beard is smoked from my cigar and I feel like I need to rinse it out.
