    Christmas Eve Bone-In Ribeyes

    Beef..it’s what’s for Christmas Eve dinner. Salted and sitting in the fridge. Planning to smoke @ 225* until IT of 120* then throw on the gasser/grillgrates flipping until individual doneness. Sound like a plan? First time doing bone in.

    THat is exactly how I do ribeyes .... indirect heat until an IT I like and then cook on grill grates. Turns out great, in my opinion. I only dry brine and then hit with garlic powder and coarse black pepper right before going on to cook.

    Sure. That will work fine. Just one of the many ways to cook a steak.

    Now, the bigger question is what time is dinner? I’m just up the road from you in SE WI. 😋

      I should have mentioned that at least on mine and my wife’s I will be using HC Black. Everyone else will be asked.
