          I had a couple of chuckies all ready to go this past weekend before storms came through and changed my plans. They are in the freezer now, all seasoned and vacuum sealed, waiting their turn. Leaning toward doing enchiladas after seeing this!

          ecowper You will need a bag of guajillos and 2 morita chilies. Both are dried. Here's the link I use. If you don't want a whole bag of morita then just use a small can of chipotle perhaps 1/2. You can always add more. But the Morita is a dried chipolte and impose an addition deep smokey flavor to compliment pulled pork. Here's where I buy them.

          can you eat corn tortillas? White cheese like cotija, Oaxaca or queso fresco? Can your wife do green onion?

          You may may also get the chilies at the grocery store depending on your area. I th No I have Saturday or Sunday off so I will write your recipe then and post for you. Other than that it's the basics like chilie powder, cumin, etc..

          Those look great. Raining pretty good here now, but it's supposed to clear off later, and be clear through the weekend. Also supposed to get into the upper 90s, so if it weren't for needing some smoke, I'd hardly need a fire in the smoker. Those chuckies have me inspired.

              A tried and true enchilada sauce recipe: https://www.gimmesomeoven.com/red-enchilada-sauce/ Be sure to control the temp when it starts to thicken.

              After much trial and error I found it is best when made with Hatch, NM chili powder: https://www.madeinnewmexico.com/products/hatch-new-mexico-chile/new-mexico-chile-powders


              I have not bought canned or bottled enchilada sauce since. Once you make a batch you will eat it on everything !

                I had a secretary some years back from NM and she would always bring back that chilie powder. You are SPOT ON it is best with NM powder
