    The one legume we eat a lot of is chickpeas, aka garbanzo beans, aka chi-chi beans. Between the two of us we eat three to four cans of them a week. Every green salad we eat gets topped with them. I make a cucumber, chickpea, Italian dressing and Parmesan cheese salad. I make falafel in the air fryer every couple of weeks and hummus is a favorite of ours.

      My mom loved them. Me? I couldn't stand them. If I see them on a salad I'll be passing. Im a little more tolerant now but still don't like them. I do like them air fried and spiced up and hummus is okay too.

      I haven't got gas from any of the RG beans I've tried, and I almost never soak 'em. Just FWIW... not a bad idea to have some beano on hand just incase though

    You can't go wrong with any of the Rancho Gordo beans, Attjack .     I started out several years ago with a Rancho Gordo Bean Club membership (4 deliveries a year). At 6 bags of beans per delivery, I quickly amassed a herd of RG beans. Not that that's such a bad thing. But when they came out with the Bean Club Lite membership a few years later, I switched to it. Now my RG bean collection doesn't scare my husband as much.

    What to buy?
    For a surprise, try the Christmas Lima--not your mama's lima, for sure
    Can't go wrong with Marcella (cannellini), Ayocote Morado or the Pinquitos.
    The Domingo Rojo makes great Red Beans and Rice
    Their Super Lucky Black Eyed Peas and their White Corn Posole are also excellent
    Mexican Oregano, Castillo Spanish Pimenton and New Mexican Red Chile Powder are also fave spices of mine.

    Whatever you choose from Rancho Gordo, you've got some good eating ahead. Their beans are so much fresher than what is available in grocery stores. I almost never soak them, and if I do, it's only for a couple of hours. I just toss 'em in the Instant Pot or Dutch Oven and get on with the cook. Delicious results every time.

      I had the Bean Club for some time, few years ago (Kathryn, I bet we heard about it from same source.) I also amassed a stockpile, so stopped for a bit, and since I've started looking to buy again I've found the Bean Club has been sold out for a while, with a wait list. I am too impatient for wait lists, and I've never seen the Bean Club Lite listed. I found a website, and this is no endorsement really, where I can find most of the bean choices. It is, however, a dark hole of interesting (next)

      Attjack one thing about Rancho Gordo beans is that you can take them straight from the bag to the pot and start cooking. No need to soak them at all. The basic cooking method for just straight beans is in this article on RG website.

      TxF I am an expert on exactly nothing. If anyone is an expert, it is fzxdoc. I am a fan of Rancho Gordo though. There are a couple of recipes I use - this one for black beans https://latinamommeals.com/cuban-black-beans/ and an Emeril recipe for red beans and rice https://www.google.com/amp/s/www.foo...ce-3646321.amp. The rest of my bean collection gets cooked with whatever recipe I happen to find with my own tweaks. My favorites are the lucky black eye peas, the midnight blacks and the pinquitos. And the cranberry... hell, I like them all. And I usually use the IP now and I don't soak them.

        This is the breakfast that's led me to want to up my bean game. I'm eating this most mornings now. Whole grain toast, fried egg, black beans, cottage cheese, chili crisp, cilantro. I make a cup of dried beans and keep them in the fridge. I season and heat them up on a little square of tin foil next to my toast in the toaster oven. This comes together in less than 10 minutes.

          What they said. I've had Rancho Gordo beans up to 2 years old in the pantry and they cooked up just fine in 2-3 hours on the stovetop, without an overnight soak.

          So now I live alone on my rv and I still can't give the bean club up. It is right up there with MCS. I would call it MBS but that could be read several different ways...

        I lke em all....big fan of cold bean salads in the summer and a pot of beans with diced onions, bell pepers and celery in the winter
        • Lentils are good (wife likes the soup; I prefer when they served like beans...google Lentil Sheppard Pie).. I used a smoked turkey leg in my Lentils
        • Italian White Bean Salad (great Summer Time side) or White Bean & Beet Salad

          I love lentil bean salad ….. make it with black caviar lentils, don’t over cook them. Once cool, add chopped cherry tomatoes, red and yellow bell peppers, and a good Greek vinaigrette.
