I bought some andouille sausage so red beans rice is on deck probably next week. Maybe I'll smoke some ribs Cajun style to go with it.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
Beans I've had from Rancho Gordo that I really liked included:
- Marcella. White bean, bigger than average, but really good.
- Pinto - just because its a staple, but these are way better than most.
- Cranberry
- Christmas Lima
- Piquinto
- Midnight Black
The ones I've bought the most of are the pinto and piquinto's. I've also got a bag of black garbanzo beans I keep coming across in the pantry and really need to do something with. Maybe good cold on salads, or as black humus?
If I am just making a pot of beans, one thing I found that amps it up is to use chicken stock in place of water. Or if using water, I toss in some chicken bouillon cubes. Takes care of the seasoning and adds some flavor. I usually use my Lodge 5 quart dutch oven, saute some onions and garlic and celery in olive oil, then add the dry beans, cover with water or stock, and cook the beans.

Made some of the Vaquero Beans. Sauteed onion, carrot, celery, and garlic in EVOO; covered with boxed chicken stock and simmered until done. Been eating them with eggs for breakfast. Very tasty. Next time I will use bell pepper instead of carrots to see how that goes.

Or a jalapeños or two. With or w/o seeds.
The heat gets lost in the sauce and adds terrific flavor.

Cooking the Tuscan beans right now. Sauteed a carrot, half an onion, garlic, 1 jalapeno, 1/2 red bell pepper, and S&P. Using water on this cook to see if it matters vs boxed stock.
**Update** Much less flavorful with just water. I added some better than bullion. Much better.
