    Mrs. Huskee's Chunky Beef Noodle "Stoup"

    This is my wife's own beef noodle soup recipe. We call it "stoup" because it's hardy & chunky and eats almost like a stew, but still has a generous soup-like broth.

    Ingredients
    • 3lb beef chuck roast, dry brined 24hrs+ in advance
    • 6 medium yellow (Yukon Gold) potatoes, skin-on, diced
    • 3 large carrots, sliced/chopped
    • 3 medium cloves garlic, minced (or ~1 Tbsp minced garlic from jar)
    • 1 medium yellow onion, chopped
    • 3 Cups your favorite beef broth, NOT low sodium, (or equivalent made from beef broth base and water)
    • One 12 oz. bag extra wide egg noodles
    • Pinches of: Salt, pepper, garlic powder, onion powder (or Morton's Nature's Seasons seasoning)

    Steps
    • Sear roast (pre-trimmed of exterior fat) in skillet well on both sides and ends, set aside
    • Saute onions & garlic until slightly browned
    • Add uncooked carrots and potatoes to sauteed onion & garlic
    • Season veggies lightly with salt, pepper, garlic powder, onion powder (or Morton's Natures Seasons)
    • Add veggies to Dutch oven or other large stove-top pot
    • Add 3 Cups beef broth to pot
    • Cut roast into bite-sized pieces, trimming all remaining fat out
    • Finish cooking beef pieces in skillet
    • Add beef to pot
    • Simmer all ingredients 30-45 min, covered, stirring occasionally
    • Boil noodles ~5 minutes
    • Add noodles to other ingredients in large pot or 6qt crock pot after simmering is complete
    • Stir well and serve!

      YW. Even my pickiest children all said variations of "this is awesome" when my wife finalized her recipe, as you see above. In fact my middle son ate the very bowl in this pic and said "this soup is the best, you need to make this more".

    Looks great Huskee. Nothing better than a hearty hot soup during the winter in the north!! I'll be giving this a try.

      Thanks! It's the equivalent of "mom's chicken noodle soup", just beef. Well seasoned as is, balanced, needs only maybe a slice or two of buttered bread! If you do try it, I (and my wife) await your honest opinion.

      I can't do all liquid soups, if I can't chew it I really don't want it. My only exception being a thick tomato-basil bisque, dip a grilled cheese sandwich into it and I'm in heaven.

    Thanks a bunch. I've had a bad cold/sore throat for a while and a hot bowl of that stoup would be awesome for my throat and more importantly, my belly!

      Awww man, I just got over one that I've had for 1.5 weeks, actively sneezing and blowing nose all that time, Claritin and nasal spray would barely touch it. Worst I've had in a while. I hope yours is shorter! This will definitely help your belly feel good though!

      Now that's some great looking comfort food! My wife does something similar with chicken noodle soup. Egg noodles are my favorite!
