I don’t feel I’m missing anything at the moment. The only real gap I have is something that would cook Santa Maria style, but I’d never buy one myself because the weather here sucks. So, maybe a better idea would be a grilling shed/lean to with 3 protected sides.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
Right now I am at a loss, aside from maybe a high quality offset smoker that is not a leaky COS.

I’d get Henrik to build me a custom from Hank’s True BBQ and ship it to me from Sweden. Would be the most unique and individual stick burner in the US, for sure. And cool to cook on to boot

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
LOL, everyone knew what I would pick before I ever got here!
The 23†Komodo Kamado would fit perfectly into the space that the BGE fills right now. I think I can even get a pretty close green color!
