I'd love one of Henrik 's offsets too, been wanting one since his first posts about them. I really like the design and appearance of them. I have a buddy in the shipping business (owns a company) and he even advised me that it would probably cost more than the smoker to bring one to the states.Last edited by 58limited; June 11, 2022, 11:42 AM.

Wow. I have limited real estate, and I doubt I would use an offset very much. Getting the wood for it would be an issue (my tiny plot of land only has two palm trees on it, and I want to cut those things down because they are USELESS for anything except being a hazard to my fence if there is a hurricane). The Komodo Kamado is an obvious choice, the 32 inch in blue would be something else. BUT I like my Primo XL and really I only "needed" a larger cooker once. At work my floor contains three divisions, the secretary for one of the other directors wanted me to cook ribs. I agreed, because everyone on the floor loved her. Her boss? Nice enough guy but.....that is a lot of work, you know? Anyhow that is when I learned that YES, you CAN cram 8 full racks of baby backs into a Primo XL. And who needs to cook more than that at once?
I have a gasser and a flat top. They are perfectly fine for my use.
It would come down to either a nice stainless steel Santa Maria grill, or a large VERY HEAVY brick pizza oven.

Backyard Jambo, T1000 Woodmaster, MAK 2 star, 14" & 22" WSM, 2x 22" Weber Kettle, Stoven, Hot Box Grill, Hasty Bake Ranger, RecTeq Bullseye, GMG Davy Crockett; Original Grilla and others I'm not remembering!
Reading these has brought home to me how BBQ Lucky I am! I'm sitting at my computer at work just waiting for the rain to quit so I can get in the van and head to a contest with my Jambo Backyard on a Geer trailer. Got meat mostly prepped (haven't decided whether to lollipop the chicken legs or cook "natural"). I really don't need anything BBQ, but I shall take the 22" kettle Santa Maria device out of the box and try it out on the bottom of my WSM. Great Weekend Everybody!

Cooking gadgets
Weber Summit Charcoal Grill Center
Weber Summit Platinum D6
Blue Rhino Razor
Dyna-Glo XL Premium Dual Chamber
Camp Chef Somerset IV along with their Artisan Pizza Oven 90
Anova WiFi
Thermometers
Thermapen Mk4 - ThermaQ High Temp Kit - ThermaQ Meathead Kit - ThermaQ WiFi - ThermoWorks IR-GUN-S - ThermoWorks Signals & Billows - ThermoPop -ThermoWorks ProNeedle - ThermoWorks TimeStick Trio x2 - and a Christopher Kimball timer - NO, I do not work for ThermoWorks...I just like their products.
Other useful bits...
KitchenAid 7-qt Pro Line stand mixer
A Black & Decker food processor that I can't seem to murder
A couple of immersion blenders, one a "consumer" model & the other a "high end" Italian thing. Yes, the Italian one is a bit better, but only marginally
Instant Pot Duo Evo Plus 8-qt + accessories like egg-bite & egg holders
All-Clad pots & pans, along with some cast iron...everything from 7" Skookie pans to 8.5qt Dutch ovens
Weber GBS griddle, pizza stone, and wok
Knives range from Mercer to F. Dick to "You spent how much for one knife? One knife?!" LOL
For me, probably a decent stick burner. Keeping it fed could be spendy as I have no source for wood beyond retail though.
Second, well…perhaps not, would be a quality Santa Maria grill…but with a lid/cover for those days when the wind kicks up. I’d like to be able to "shut it off" when that happens or when I’m finished with it. A bit like what AZ BBQ offers… Every time I look at their page, I get a little closer to ordering one. I might just have to call & stop by one day.

I'd go with a good stick burner.
Have never cooked with one, but would like to add to my list of things I've tried..
likely this is the only way it would happen, as a good one is probably outside my price range...
