Good evening. The past couple of days we've have had fantastic weather. Today was the best. 73, sun and no wind. I finally put the griddle insert on the Spirit. This evening was steak and cheese. Green pepper, sweet onion and pepperocini. Seasoned the meat, Trader and shaved steak with SPG. On a toasted sub roll.

mrteddyprincess it's from Trader Joes. It sold in 16oz. package at about $11. It's top round.or eye round according to the packaging. Either it's good.
So the only thing I shave is ???

      Yessire!

Swung by a Costco Business Center last week for the first time and had to grab these flanken beef ribs. Marinated in Bachans for a couple hours and then grilled over some Jealous Devil lump and a couple oak logs

@Andrr Yep, just pick them up and gnaw the meat off the bones. The little bits between the bones are excellent.

      Love it!

“Strange Flavor Chicken…Salad” my new favorite use of leftover chicken breasts. 2 smoked breast halves torn up, nuts, scallions, sesame seeds, lots of crunchy veggies and the sauce.

This looks intriguing. Thank you for the inspiration.

The burger so nice, I made it twice! This time, I made it a hybrid serrano/onion smashburger. And yesterday I forgot the bacon; today I did not.

    The photos tell the story.

      Bacon makes everything taste better!!

Egg Fried Rice With "The Mix," from Kenji's "The Wok." Wow. This is a great recipe. The mix is ground pork, chopped shrimp, garlic, ginger, soy sauce, baking powder, sugar, and corn starch, all. mixed together for a minute by hand. The mix serves as the protein. My family (a lot of them, at least) were here for dinner and 8 portions disappeared fast. Highly recommend. Click image for larger version

Ton of food tonight: big ol’ pot of garlicky white rice, black beans and greens, couple salsas, and leftover beef cheek barbacoa tacos. Also, a beans and greens taco which was pretty solid. Got burrito fixin’s out the ying yang.

texastweeter - just made up a dumpling mix with pork and spread on the tortillas then cook pork side down for about 4 minutes and then flip to get tortilla crisp. For my wife and I, this gives us that dumpling fix, as we have not found gluten free wrappers. I think these are better than dumplings!

Well, I failed on picture. A salad with leftover strip steak Then a handful of these.

Those are easy to homemake. We also do fried grits balls with crawfish inside, and mashed tater balls with garlic and cottage cheese inside.

I need to come to Texas!! texastweeter Those grit balls with crawfish 🦞 are sounding like luxury bites!! 🔥🔥🐿️

Wangs....Just Wangs....I'd like to say traditional, but not...The sauce was a Cajun Combobulation of all things Cajun and a few things not...I was just "Winging it". The dressing was anything but ordinary....Imported Gorgonzola (50% off...Still pricey) Olive Oil and Balsamic Mayo mixed with a little Lemon, Parsley and Oregano....Delicioso....The carrots and celery were pretty ordinary....The Baked Potato was well....a Potato..... For a Hump Night meal...Oh Yeah...

You had me at gorgonzola. I'm all in. Yeah!!

Surf & Turf (Bacon-Wrapped Filet Mignon & Jumbo Shrimp)

Par-cooked bacon in the oven for about 10 minutes at 400°F. While the bacon was cooking, seasoned the filets and shrimp. Once cooled, wrapped and set aside while the grill came up to temp. Seared the filets for about 2 minutes per side with a quick char on all sides to crisp the bacon a bit more then moved indirect, pulling at 130°F IT. While the steaks rested, cooked the shrimp in the hot cast iron until cooked through and the bacon browned nicely. JUST DELICIOUS!!! 🥩 🦐
