    A ridiculous close up of that bread I made yesterday supporting a meatball/sausage combo! I ate half what you see there. I’m putting this bread recipe in the paprika and will share!

    Very successful carne asada cook during the first big blizzard of this winter. Porter Road outside skirt steak, homemade salsa, and all of the fixing. Same recipe for 20-plus years and it is still delicious. The first cook on the new PK300 is done and it crushed it. Super easy to use! The coals were out within an hour so I was able to get it back into the garage before the snow really came down and the wind picked up.

    Well the plate looks like someone….you know. 🙄 But if you can get past how it looks, this mess is actually beef Osso Bucco with mashers. Looks terrible, but oh so good. A perfect comfort meal in the midst of the bad winter weather here.

    Venison Philly steak sandwiches w/ smashed potatoes on the Blackstone. The venison (which I shaved on the meat slicer from a 30 day dry aged venison sirloin roast) was seared in wagyu beef fat, and the smashed potatoes in duck fat. Seasoning was a garlic herb dry rub. It was special! (unlike the quality of my photos 😂).

    I worked late tonight. So I bought a couple Store Pre-Stuffed Pork Chops. With my handy dandy Cast Iron I put a quick sear, then added some onions, garlic and mushrooms. Then a little honey and chicken stock. Baked at 350 for maybe 20 min.

    I have to say the chops came out darn good. For a severe winter storm night anyway.

      CHNeal I'm thinking a version of this would go really well in our Dutch Ovens. Including the Potato and I think when in season, Corn on the cob. Right now it's snowing and below zero...But sooner than later I will take that Cast Iron Machine for a test drive.

    Cold weather deserves warm comfort food. I searched online for chicken a la king recipes and pretty much did the first one I came across at https://thestayathomechef.com/chicken-a-la-king/.

    This turned out really good and it comes together quite quickly. You sautee some mushroom slices in an entire stick of butter, then add in some flour for a roux, then pour in some chicken stock and milk. Once that thickens, you add some egg yolks and some heavy cream (health food this is not!). Then stir in some peas, a ridiculous amount of diced pimentos, and some cooked diced chicken.

    I served it over buttermilk biscuits. So thick and rich....and so comforting!

    (The recipe is a bit under seasoned. I added a lot of salt, pepper, and some garlic powder to mine.)

    Breakfast burritos this morning for breakfast on the flattop, it was super cold out there while making them. Ended up only doing the first two completely on griddle for us to eat, then assembled the rest inside for breakfast next couple days. Crumbled sausage, hash browns, eggs, cheese. Hubby and kid gave 2 thumbs up!

        I forgot the pics of my home fries from this morning. These turned out even better than normal! Didn’t bother with picsof the sausage or over easy eggs cooking as thats like watching paint dry boring but damn these tators…
