    Hunting & Fishing Season 2024 & Wild Game Cooks

    New season, new thread. Let's see some of your excursions into the wild along with some of the cooks that result from your success (or maybe defeat).

    We refer to these as deerstand tacos due to their ability to be tossed in a pack and they are dang near indestructable, but they are good anytime. These are venison sausage, egg, and mozzarella.

    Have not hunted in 25 years. Fishing is also somewhat of a distant memory. That said always enjoyed both and do miss the wild game and fish. I'll be a fly on the wall for this one, love to see some wild game cooks. Good thread Tweeter.

    How about some piney woods rooter carnitas? A piglets worth. Rubbed down, then seared off, and braised all day in venison stock with onions, oranges, jalapeños, and limes that were seared as well. When tender, pulled, and fried in some bacon grease, and tossed with the reduced braising liquid. Popped with cilantro, radishes, pickled red onions, shaved cabbage, pickled jalapeños, and 7 pot primo hot sauce.

      Just got back from my buddy Wayne's. He also happens to be our taxidermist. Here he is with my oldest daughter Emma her 14 inch euro mount from her first whitetail harvest, and my youngest boy Clarence and his state record green sunfish. If you are in the ETX area, and looking for a reasonably priced taxidermist, but dint want to sacrifice on quality. I suggest you give Wayne's Wildlife Studio a try!       Cooked the wife and younguns chicken fried venison and mashed taters. No plated shots, the literally called dibs on the while they were still in the grease.

        Some time when you want a little change in your chicken fried venison try this. After you finish frying put the steaks in a baking bish with about a half inch of Campbells consume and bake for 30 minutes at 350. It’s so good.

      Smoked then braised feral piglet. Served with pintos, and reaper sauce.

        Looks awesome but I do have a question. Doesn't braising after smoking tend to dilute some of the flavor. Anytime I braise a meat I end up thickening the juices to pour back over the meat when it's done to flavor it

        Being that it was a quartered piglet, it had a lot of surface to take in smoke. Also minimal liquid in the braise. 1.25 cups of apple juice, .25 cups my bbq sauce, 1/2 a noonday onion grated, and 2 tablespoons rub. Yes it dilutes it some, but it is still plenty smoky. Starsky

        Irish venison stew. Also found a hunk of lead I missed when processing. I'm thinking .243 Hornady interlock

          Great thread! I need to get fishin’ & postin’ 😁 I got a Trigger fish last weekend but didn’t take pics so it didn’t happen 🤣 Them Trigger fish have armor skin!
