- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
Cut some strips off it and cure it as tasso - I love love love some tasso. There is a good thread on here somewhere with a recipe for it. I usually cut up an 8 pound butt into multiple smaller hunks when making tasso.

Anton32828 turned me onto tasso, and I've made it a few times since reading his recipe. I know it is supposed to be used for cooking, but I end up slicing it thin and making sandwiches with it!

For those curious, I ended up making pulled pork and chile verde... I also ended up buying 2 additional pork butts, because I found they were $0.99/lb at Meijer!
