Cut some strips off it and cure it as tasso - I love love love some tasso. There is a good thread on here somewhere with a recipe for it. I usually cut up an 8 pound butt into multiple smaller hunks when making tasso.

Anton32828 turned me onto tasso, and I've made it a few times since reading his recipe. I know it is supposed to be used for cooking, but I end up slicing it thin and making sandwiches with it!Last edited by jfmorris; December 3, 2020, 09:15 AM.
