      Cut some strips off it and cure it as tasso - I love love love some tasso. There is a good thread on here somewhere with a recipe for it. I usually cut up an 8 pound butt into multiple smaller hunks when making tasso.

      Anton32828 turned me onto tasso, and I've made it a few times since reading his recipe. I know it is supposed to be used for cooking, but I end up slicing it thin and making sandwiches with it!

        It works well in Jambalaya ant red beans and rice.

      I have been buying pork butts when they are on sale around here .99/1.15 a pound and making brawts, polish sausage, breakfast sausage.

          klflowers great suggestion! I have the grinder attachment for my monster kitchen aid on my Christmas list... so maybe for the next pork butt!

        Shorts answer - Tacos!

        Long answer - Taaaaaaacccccccoooooooosss!!

        Pulled pork tacos with a slaw is good. Pork hash w/ egg breakfast taco is fantastic!


        Also - turn about 1/3 of that shoulder into burnt ends. You won't be sorry.

          Try it in an omelette with cheese of choice and topped with a good enchilada sauce. A memorable breakfast.

            For those curious, I ended up making pulled pork and chile verde... I also ended up buying 2 additional pork butts, because I found they were $0.99/lb at Meijer!
