    First Pork Butt in a LONG TIME

    You can tell I’ve been crazy busy with life .... first time I’ve cooked a pork butt, according to my FireBoard records, since July of last year! That’s just crazy. Going to do it using my standard method .... dry brine overnight, cook on the WSM 22 at 250, use my Carnitas style rub, and serve with coleslaw and a mess o beans .... posting pics and commentary along the way starting right now This thing is pretty big. 10 lb bone in .... trimmed about a pound of fat, so 9 lbs now.

              RustyHaines me too, actually. My wife bought a 2 pack of boneless pork butts at costco many many years ago and asked me to figure out what to do with them :-)

            Well, sorry crew ... the cook will happen tomorrow now .... last night my lovely wife said “I would really like to have steak and potatoes tomorrow” ..... so one more day :-)

              got the pork shoulder on this morning. Started up the WSM about 5:30 in pouring rain. Got up to temp by about 6:20 and on went the butt. We are about 4 hours in now.

              5.5 hours into the cook now. the butt's internal temp is 146F and starting to get a nice bark going. The weather cleared up a bit, but still 45F and feels like 38F ..... It won't get higher than 48F today. Temp at the top grate is running at 240F right now, plus or minus a few degrees.

              So far, all is well. Love the WSM 22, holds temp like a champ .... just remember too keep the water pan full :-)

                Good to see you cooking and on here again ecowper ! You are stirring up my MCS again with pictures of that WSM 22! That is on my short list, but with financial and job uncertainty right now, MCS is out the window.

                  and when you do get a WSM, you're going to want a hinge for the lid, and a better door, and a ..... oooooops, sorry MCS and stuff

                Well, I took this Pork Butt all the way to 203 and then held it at 175 for an hour .... ..... about to eat ... pork on pretzel buns, mustard sauce, coleslaw ...
