    Bacon Wrapped Spare Ribs

    Bacon wrapped spare ribs seasoned with Texas Select Seasonings Jalapeno Dusted and Juicy Pig then glazed with Texas Select Seasonings Smoked Apple Strawberry Habanero BBQ Glaze. They turned out AWESOME!! Shout out to Wild Bill Powell for the outstanding rubs and glaze, and to Bob Trudnak for the tips on getting this done right!

    I trimmed the ribs up to a St. Louis Style cut, then seasoned them with a light coat of Jalapeno Dusted and then a nice coat of Juicy Pig. Wrapped them up in bacon and put them on the offset at 275. They probed tender with a toothpick at around two and a half hours, so I gave them a nice glaze and let them ride for about ten extra minutes. Great bits, and a very tasty treat.

    They look fantastic. I was wondering how you were going to manage over-cooking the bacon before the slabs were done and I see you cut the ribs individually. Cleverly done.

              It's torture for me. My wife and I just started our eating regimen again. Something like that will be a rare treat for the time being.

                        It was just cheap, store bought, thin sliced bacon. I'll be curing a batch of bacon, next week, and will make some thin slices and see how they work. This was a very cheap dinner. The whole thing was $17.00, and fed a family of six, with a few bones left over.
