      Reckon I don't feel like no kinda Authority, so reckon it ain't up to me, to determine how other Folks might like they foods done...Only know how I likeys mine, an prepare em, hereabouts...

        Good points all around and I’m not going to get into that other than I like the pull off the bone. But my in-laws had us over for ribs a little while back and they were….. let’s just say that since learning what I have here over time…their favorite recipe is worse than "not good". Pre baked in the oven then gas grilled, then slathered in KC style bbq sauce to replace all the flavor the ribs lost in this process which is pretty typical of this region. They were so tough I was about to use a knife to get the meat off, and they raved about this special recipe and how good they were! I still can’t believe I didn’t get sauce all over me from the violent snaps of meat releasing from the bone and membrane. I’ve been planning an intervention at my house ever since.

          Slight tug on the bone. The meat should not all fall off when I take my bite. I like texture to the bite, not mushy.
