I am in a BBQ class this weekend and will have a lot of leftover pork and chicken.
Tuesday I have a work luncheon and need to take something. Main dishes have already been spoken for so looking for some side dish ideas using the leftover pork or chicken. Ideally something that can be cooked / prepared in advance and then reheated in the oven would be best. Would rather not do Mac n Cheese.

I like mixing BBQd chicken into the Broccoli Cheese Casserole I make.
1 medium onion
2 tablespoons butter
8 oz Velveeta cheese
1 can cream of chicken soup
1 package frozen chopped broccoli thawed
4 cups cooked rice
Garlic salt to taste
Cook onion in butter until softened. Cube up the Velveeta and add it and the soup to the onions. Cooker over low heat until the cheeses is melted. Add in broccoli and rice and season. Mix in as much chicken as you want.
This will stay warm nicely in a crock pot. If baking in an oven maybe thin it down a bit with some water so it doesn’t get too thick. It is also easy to thin down while baking if it gets too thick.
Maybe you can do the one and only gboss cinnamon rolls with pork. I know his was with pork belly but just throwing it out there. And maybe a chicken potato salad thingy?

I make empanadas using leftover smoked pork or chicken. I buy the frozen shells from Goya - any ones work but they make special ones for baking if you can find it. Reheat (and freeze) really well.

Lot of recipes for pulled pork spaghetti out there. It is surprisingly good.
My go-to with leftover chicken:
2 cups of chopped or shredded chicken
2 cans of Cream of Chicken soup
2 cups of rice
8 oz sour cream
sleeve of Ritz crackers crumbled up
8 Tbsp of melted butter
Preheat the oven to 350
In a bowl, mix the chicken, soup, rice, and sour cream.
Grease a casserole with butter and pour the chicken mixture in
mix the melted butter and Ritz cracker crumbs and spread over the top
Bake for 30 minutes or until the crackers are nice and browned.
No James Beard nominations, please. But this little casserole is addictive.
