Preview of tonight's dinner: Lamb. I'll grill them on the PK-O and serve with oven roasted green beans and scallion champ. Recipe is from several sources including the SnS website. In food processor I put chopped shallots, pepperoni, and jalapeno. The jalapeño has seed and membrane in. Chop finely in processor. Then I put 8oz cream cheese, softened. Add to processor and puree. Put in Pyrex, sliced jalapeno, no seed and membrane. In preheated oven at 350 for
20 to 30 minutes until slightly browned.

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Maverick 732, DigiQ, and too much other stuff to mention.
No snacks, no party. Just the two of us. Mrs can’t eat a lot of the things that bring joy anymore, or at least not often.
I make a chicken casserole with mirepoix, green beans, mushrooms, corn, peas, garlic, all mixed in a cream sauce with cheese and stuffing. It will be ready in about 15 minutes.
It’s really good, for not being bbq.

Here are the final pics of the lamb cook. As we say in Texas, I got the fire F@#&%*n' hot! I said "freakin'" but decided to bleep it since Panhead John is a sensitive person. He has been known to cover his ears and run away crying when someone talks harsh like that - you know, a sissy. (Did you know that in his mom's basement where he plays his video games that his game system has a V-Chip that makes Grand Theft Auto: San Andreas into a G-Rated love fest?)
After this sear the internal temperature was still 67 degrees.
Plated with the scallion champ and the oven roasted green beans (toss with olive oil and S&P. Cook 10 minutes at 425* then add sliced shallots, garlic, and mostly cooked bacon. Cook another 10-15 minutes and top with toasted chopped hazelnuts and sesame seeds, and finally with fresh grated good Parmesan cheese - the pricey stuff you hide when the In-Laws visit).
Seemed like kind of a snooty meal so I put the Sam Adams into a sorta snooty stemmed German beer glass. I had some extra bacon left after adding some to the green beans so I added it to the scallion champ.
This is the first lamb rack I have cooked. This is soooo tender, not strong tasting at all - not sure why people don't like lamb, if I was tasting blind folded I would have thought this was prime grade ribeye. Perfect medium rare.

This is one of the best meals that I have made in a long time. And Panhead John, you know I'm just funnin', we still need to meet up at the local brewery here in SE Texas.
