I’ve already done some St. Louis spares for Mari Jo’s girl gaggle get-together at Lake Norman on Sunday and I’m smoking a chuck roast today. We’re going the slow-food route this year since it’s just us two. Smash burgers sound like fun.

I think I'm barely gonna make it home in time for fireworks from the Giants vs Braves game the day before. I'm kinda bummed as I would have liked to throw a butt or something on the MAK. Neighbor is grilling dogs though, so I'll make sure I get a couple extra charred ones for me!

Made a Sams run Monday am, Wings, Prime top sirloins, prime Hamburger patties, two slabs baby backs, doing ribs on the 4th, it will be a rain day, but I have a covered cooking area, and thinking about Mr.Bones.

We're coming up to a hot spell: 111 today, working up to 115 on Saturday. Son and family will be here Thursday night from Ventura, so they're in for a (less than) treat.
Lots of ice cream, watermelon, frozen pops and sprinklers. Hot dogs and brats, SLC ribs, corn on the cob and potato salad are all I have planned.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
Picked up some nice big fresh bratwurst out of the meat case at The Fresh Market today, to toss on with the burgers on Thursday, along with their fresh ground chuck at $3.99 a pound (Tuesday special). I've been seeing fzxdoc Kathryn talk in the past about how good their various sausages are, and these looked bigger than the brats I can buy at Sam's Club. Just got 8, at $4.99 a pound, since there will be burgers and hot dogs as well.
Also bought another 3 pack of their ribs that were so good on Father's Day, but gonna work tonight to make hamburger patties and vacuum seal those and individual slabs of ribs for the deep freeze.
Also rethinking my ice cream recipe to do an orange sherbet or something similar, since one grand baby has come up with a potential egg allergy. My normal ice cream I use Eggbeaters in place of the eggs I used to use decades ago, before we heard about salmonella concerns from fresh eggs...

Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.
To update my daughter and family will be here on Thursday. And my S.I.L. will bring some lobster to boil up. He make the best lobster rolls. Ribs are almost defrosted. I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Family plans finally came together this morning, and even that is way more organized than we usually are. Daughter, her boyfriend and the two grandkids will come over sometime in the afternoon.
I picked up a rack of pork loin back ribs and a rack of St. Louis cuts yesterday. I'm thawing a package of hot dogs for the grandson who won't eat ribs (gotta work on that boy!) and I also found some andouille to thaw. There's also some corn and a big batch of CSA potatoes we never got to.
The ribs will go on the LSG Adjustable. I need to make a batch of our family recipe KC style sauce today for the ribs.
The Pit Boss Copperhead will be set to 400 to roast the potatoes, corn, hot dogs and andouille. I'll make street corn mix on the side for the adults to put on their corn (I'm thinking a dab of mayo, queso fresco and tajin).
Edit to add a photo of the Pit Boss Copperhead that I bought to use both as a holding oven and as its intended pellet smoking capability since WayneT didn't remember my discussion about it a couple of months ago.

We’re hosting up at the lake house and we’re planning on just catering from the grocery store. We did a few weeks ago and it was perfect. More boat time. However they’re not taking any more orders so I’m going to smoke a pork shoulder or two overnight on the Traeger for our lunch and then my wife is making a pasta bake. My MIL is bringing up Italian beef from a place called Serelli’s which is a family favorite apparently that’ll go in a slow cooker. Oh and Kirkland hot dogs for the kids.
