July 4th Cooking Plans 2024? (U.S.A)

    Steak, chicken, burgers and might even cook a turkey for sandwiches. Planning on cooking from Wednesday to Sunday.

    If HEB has ribs, I'll be doing some baby backs and either street corn or BBQ beans. If no ribs.... perhaps Rick Bayless' queso fundido burger (ground beef, chorizo, cheese, and peppers).

      Going to a friends house for the weekend, so going to smoke some St. Louis cut spare ribs on the PBC Tuesday and then reheat/grill off on July 4th.

      also going to throw some bone in/skin on chicken thighs and do a pulled chicken to bring too. Haven’t decided on the sauce but leaning towards a mustard sauce.

      All the kids and grandkids will be here swimming. With the heat I’m thinking of just lighting the SNS Kamado by the pool, and doing traditional burgers over charcoal instead of standing over a hot griddle doing smash burgers. I’ve not done regular burgers since 2020… so this will be a pleasant change.

      I’ve also had a request for Nathan’s from Yvonne, and brats from the kids. Those will work on the kamado as well. I’ll stop with those 3 meats. I’ll make a churn of home made ice cream as well, and let all the kids bring the sides.

      There are years I had the offset and one or more grills going, 30+ in-laws here, and 5-6 meats. Being a little more subdued this year…

      Supposed to be off. Something marinated in Italian Dressing and BBQ Sauce. Gonna check out my hunting area. It got burned for the first time in 20 or so years.

        We're looking at 106 - 108 out here...so scaling things down a bit. I'm thinking of doing "competition" BBQ chicken thighs, maybe some triple seared burgers, watermelon salad, maybe potato salad...white wine sangria and (for the hearty) Spaghetti Westerns...we'll see who's upright at the end of the day...

          It's suppose to rain here...again. Might make some Bacon wrapped Coca Cola Chicken Breasts. They are pretty tasty and I haven't made them for a few years. Happy 4th everyone.

          Not much of nothing. We usually get together with the in-laws for something, but they’re out of town this year; and we’re hosting a shindig on the 6th. So the 4th is going to be low key. Burgers maybe? Something where we won’t still feel full two days later.

            Gentlemen, despite my better nature, I planted a Carolina Reaper plant in my garden this year. I don't know what the plan is for the peppers. I am forbidden from taking any of them into our house as I nearly killed my wife two years ago trying to process them.

          Beer, Brats, and burgers with a side of baked beans. I slow smoked some pork steaks to pull and add to the beans. First time used meatheads Memphis dust rub.

            I am working the 4th. But I am making ahead of time (tomorrow and Wednesday) chopped brisket, brisket burnt ends, and brisket mac and cheese. Taking some of the brisket mac and cheese for the work pot luck.

            I was thinking about doing a bunch of pizzas on my pizza oven. We will probably have 15-20 people over so I can just keep cooking as long as they are eating.

                Decided to take some leave time this week around the holiday, and the weather forecast calls for hot, muggy, and thunderstorms from the 4th through at least the 7th, but super nice from today until then. So today I've got a rack of Wild Fork baby backs on the SnS kettle with twice-baked tater and steamed zucchini, and made chateaubriand sammiches for lunch (posted about that on Leftovers); tomorrow I'll do a yardbird in the Pit Boss pellet rig with corn on the cob and broccoli; then Weds I'll make Rita's Fajitas using leftover tri tip that I made via SVQ a few weeks ago along with a pot of Rancho Gordo pinquitos.

                On the 4th, my lovely bride plans to make us burgers of some form or other, either smashers or Your Basic - probably depends on whether the weather allows us to use the gas grill. Haven't planned much beyond that yet...
