    Ideas for easy snacks/bites on smoker for crowd

    Hosting a big BBQ for my son's first birthday. I have a tendency to overextend myself when it comes to cooking, so I am trying to make things a bit easier for myself this year, though I still can't resist the urge to do too much - just how I am. Gonna do all sides store bought so I am just cooking meats and whatever other bites/apps I want to serve.

    I have a plan to do a butt and brisket overnight in my PBC using a long oven hold to give me plenty of wiggle room. I have done it before with great results so I feel comfortable with that.

    Hot dogs on the gas grill which is obviously very easy (will probably trick someone into doing that for me).

    Trying to think of some easy apps/bites - going to make smoked queso which is always a hit, feeds a crowd and I can make the night before.

    Any other ideas? I have done Malcolm Reed's bacon wrapped chicken bites before, little bit of prep involved which is fine, and I could have them on a rack to pop right into the SnS kettle or PBC in one go vs fiddling with each one.

    I know its gonna be too much but I was also considering throwing on a few racks of ribs at end of the overnight cook, slice them, toss in foil pain with some sauce and keep warm until lunch time, or is that a recipe for overcooked ribs?

    You could even do pork belly bites, get a full pork belly or the sliced pork belly Costco has - or burnt ends in a way. Jalapeno poppers, Chicken wings.

      Thank you! He is a menace but I love the little dude. I didn't think of pork belly. Seems like that'd be easy to cook, toss in a foil pan with the final glaze, keep warmish then hit them with some heat to serve.

    Another idea - I always like doing some kind of sliders on Kings Hawaiian - just cut the whole square of them across, throw whatever on and top them off. Maybe get some of that thin sliced steak from Costco and cheesesteak it up on the flat top with onions/peppers. Just spitballin'

        I'm definitely going to do these. May make my life easier by buying a big of beef meatballs from Costco but I have a feeling my Italian American wife is not gonna be okay with that.

        bbq_esq don't make the wife mad, buy Italian meatballs because no else will know if you don't tell them..

      Ditto for pork belly /burn ends

      I would add smoked salmon...any of those could be served with crackers cream cheese and pepper jelly

        Pork belly burnt ends for the win. I do them Banh Mi style usually and people tend to really dig them.

          ecowper Great - I think I worry too much about serving at the ideal time and drive myself nuts. Trying to make this one a bit easier so I'm not working the whole party.

        If we are not here for more gboss pork belly cinnamon rolls, are we really living at all?

            Soooooo good.

            A fair bit of work, trying to get that bacon pinned onto those sausage coins, but I'm still trying to think of a better way. Either way, they're awesome!

              I keep frozen wild game meatballs in the fridge I use, but I have also used store bought upon occasion. Wrap in bacon, season and smoke. Then dip in sauce to glaze and a little more smoke to set as a glaze.
