We've got over 2lb of prime rib left from yesterday and it was stupendous, so that's always an option, just have a redux. I also have one more pair of the Wild Fork double-bone pork chops in the chestie, those things are fantastic. We've had plenty of beef lately so maybe that's the winning ticket for New Year's Eve...
NY Day I'll be doing my next livestream, this time with a set consisting of all John Hiatt songs Then it'll be time to start rebooting my brain to go back to work on the 2nd... pretty thoroughly unplugged these days.
We have several lbs of leftover prime rib from yesterday as well. My FiL cooked and the number of jokes about him overbuying meat for family dinners is more than the meat leftover…and my sister and I each took home a gallon Ziploc bag full of meat!
My wife says the same thing about my meat preparations for holidays. Funny... as my smoker collection gets larger, and the individual smokers get larger, the amount of meat I want to cook also gets larger.
We smoked ribs a few NYEs in a row and unintentionally created a tradition. Gonna toss a few racks of baby backs coated in a modified MMD on the offset with a nice oak fire.
Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

I'll be at work, as I was last Sunday and Monday nights. I'll probably be dining on my wife's chicken tikka masala, chicken parm, alfredo, or pork chops; reheated.
We decided that NY Eve is the occasion for us to break out these A5 wagyu strip segments that I got as a reward-point redemption from CrowdCow. I'll cook them on the stovetop in a CI skillet, taking care to get the surface temp to 400F/205C, which I've seen as the recommendation for cooking such things. My lovely bride will make her fabulous sauteed mushrooms and onions, and I'll make up a batch of "Them Taters", as we call the Jess Pryles roasted tater recipe, and a green veg of some kind. Wish me luck!
I met my wife on New Years Eve and we will just be spending a special while relatively quiet evening at home but I will be putting a large Brisket on the Smoker.
New Years Day we will be hosting a Sugar Bowl Party and I'll be attempting my second Brisket. My wife went back to school after retiring and just graduated from the University of Washington and is now a Husky fan to my chagrin. I graduated from Washington State University. We are a house divided. Our House will be filled with Dawg fans with the exception of me and another former Coug and possibly a Duck.
The thing with Wildcats, Midway , is that there are so many breeds. I hear it’s dangerous to mix Arizona Wildcats with their Kentucky cousins and watch out if a Northwestern Wildcat gets in the mix.
