For us, it's Empress Chili, one of the early versions of Cincinnati Chili. It is one of my efforts in life to spread the joy of this dish to as many people as possible and so far, all have loved it and asked for the recipe!
One has not asked for the recipe, but, he is a single young man who does not cook! HawkerXP I just noticed you also noted Cinci chili; YAY! good to see a fellow Cinci Chili maker!
If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I'll jump on the chili/soup/stew bandwagon. If I make chili it will be Texas red. Otherwise the wife will make it with beans and stuff. She likes to make her crock pot soups and stews in winter too.
For cooking, if it's cold out I prefer things I don't have to stand over while they cook, like Boston butts, ribs or brisket. You just gotta go get the fire going, then go back out when the meat alarm goes off! So I will do less grilling and more smoking during winter. Or I will stay inside and use my wok. On warm days I'll fire up the griddle though.
