I've figured out my dessert.....still exploring seafood.
The seafood thing is actually turning out to be quite challenging. I love seafood. I would eat it every day if my wife weren't allergic to most of it. But, much seafood cooks so ridiculously quickly (tuna, scallops, etc.) that I rarely, if ever, break out the grill or smoker for it.
The last time I did tuna on the grill it seemed a bit silly to spend nearly 20 minutes lighting charcoal for something that cooks in three minutes.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

I've figured out my dessert.....still exploring seafood.
Finally figured out my seafood. It was so obvious that I can't believe I didn't immediately latch on to it. So, both seafood and dessert are nailed down!
As this is a bit of a tease, I'll give a hint as to what it might be. Hint: It swims. (Or at least, formerly did.)
As we get closer to the Seafood and Dessert Smack Down, I thought it prudent to enlist some well qualified seafood experts. I’ve co-opted Ulmo’s image as my avatar. With apologies to Chris Tolkein.

When you're living the nightmare, jfmorris , it's a whole different ballgame. I imagine your son got some bennies when you finally twigged to his allergy and he could load the guilt on to your and Yvonne's shoulders, as kids love to do. Lots of extra computer and TV time perhaps?
I've never cooked fish or seafood (I don't care for seafood anyway, only fish). And I've never made a dessert (dishing out ice cream doesn't count). Something like this is not the place to start!
As of now, the only dessert I’m planning is a slice of a frozen Key Lime Pie. You can throw some tuna on the grill and visit the neighborhood bakery for a dessert. Or you can do more. C’mon.
I'd happily enter my lovely bride's baked goods... she is AMAZING at such things. All with due attribution of course, I would never try to claim credit for something I didn't make. But seriously, I have never cooked a piece of fish in my life, and simply don't eat seafood. This one ain't for me!
I still maintain the best sushi I've had in the US was in CO... also the most variety and shopping options for "fresh" seafood... I now live in Oyster country and an hour from the ocean, yet I have to drive nearly to the beach to get shellfish or any seafood worth a darn.
