    The Ten Labor Days of Seafood & Dessert

    You asked for it, you got it. The next official AR Smack Down will be for seafood AND dessert! What a great combination of foods to allow Pit members to display their abilities to multi-task in the kitchen. Here in eastern NC, seafood and key lime pie is a standard pairing but don’t be constrained by what’s standard anywhere, get out of the box and surprise us with something that will be talked about for months.

    Unlike the Taco Smack Down that I recently hosted, this event will be as informal as Panhead John ‘s wedding. Don’t leave us at the altar, though. Cook and post as many meals as often as you wish during the 10-day period and enjoy all the camaraderie, compliments, and customary comments that make the Pit a foodie nirvana.

    This Smack Down will run from September 1 to September 10 to give stay-at-home and traveling members ample time to cook and post over the long Labor Day week. The Official Post for showcasing your twin culinary creations will be posted closer to the event. In the meantime, start your imaginations and get out your fishing tackle for the next AR Smack Down!

    I am in for sure. Plan on posting 2 separate deserts and two separate seafood offerings. Looking forward to the time.

      alright….Time to scope out some of that desert seafood I can find in New Mexico

      I do have a plan….one for my NM cook - as well as something that I hope will turn out the weekend of Sept. 9-10 😎 🏝️

        For the folks who don't like seafood, they could make some Rocky Mountain Oysters to good effect. ;-)

          WayneT , just to clarify, this is seafood and desert, not just one or the other, correct?

          My seafood game is terrible....I'll have to come up with something clever.... oof.

            You can post as many combinations of seafood and desserts as you wish. This is a loosey-goosy Smack Down so any advantages accrue from self gratification and bathing in the amber glow of your fellow Pit Masters comments.

          well, guess I got an excuse to buy some fishies.... I don't bake, but MAYBE I might attempt a pellet grill cheesecake... MAYBE

            What? Buy? You’re 90 minutes from the coast! If you’ve still got that hummer, you can drive onto the beach on Shackleford Banks. I would be impressed to see pix of you catching your own.

            WayneT I don't trust the Hummer for long distances. I didn't before the MeatUp and I definitely don't after it stranded me in Mebane. Debating replacing some mechanical stuff or getting something with more parts available. Regardless, I dunno what happened but I can't even gut a fish these days. Used to as a kid all the time, now it's a miracle I can even deal with a fully loaded bird with the giblets not pre-bagged

          Wayne is there any specific attire needed? Do I need to post at a certain time and perhaps stand on one leg and howl at the moon? Just checking....

          I'm all over seafood, but dessert? Oh well I need to step up my dessert game so I'm going to start my homework

          So now, is homemade sausage considered a dessert? Is that too much of a stretch?

            If it comes from ‘waters of the state’, it qualifies as seafood. Any entry made from poached (see what I did there?) seafood or seafood taken without a valid license is immediately disqualified.

            Richard Chrz Like putting vanilla in some chocolate dishes, espresso powder enhances the chocolate flavor. So, yes, I'd definitely try it at least once. If it's not your thing, no harm, no foul. King Arthur Baking sells espresso powder.
