    The real question is do I want to do beef ribs and blow the extended family’s mind away (and potentially my wallet) or blow their minds away with some butcher bought pork ribs that I can pick up in Lake Geneva. Either way I’m in. Hell might even do both.

    I was gifted a South Carolina mustard bbq sauce recently, so I think I'll do a rack of baby back pork ribs Carolina style. Then for appetizers, smoked/pulled yard bird, and some sausage (why not sausage? . The side at this point will probably be cowboy caviar. Just cooking for two, so that should cover it!

      Bumping this up once again.
      I still have 1 double pack of plate ribs that were gifted to me by our dear friend Mr. Bones, RIP brother, that I will be cooking. And plan to smoke up a couple of either baby backs or St. Depends on what looks better when I hit the store.
      Appy’s making a black bean dip and poppers SteveB’s way.
      Let’s get some more people on board. Whoohoo.

        Since the whole thing was your idea, I would say you have to make ribs for everyone that can't make it.

          Short ribs are on sale this week, so I submitted my order to SWMBO. We'll see what she comes home with on Saturday.

            My general rule is to buy as many racks as will fit on the smoker in one turn. Which makes the answer 9.

          Me and the fam (the ones still at home) will be on the road in Georgia visiting my sisters family. My BIL will probably be smoking up something though.

          Just a reminder here for folks who might be out of town this weekend, since the 4th falls on a Monday, you’ll have 4 days for your cook….Friday through Monday. Even though we’re encouraging ribs, it doesn’t have to be ribs. Show us your appetizer and sides too. There’s a rumor that Steve B will be personally giving $10,000. in cash to his favorite rib cook!

            Sausage stuffed jalapeños wrapped in bacon? That sounds great! I’m totally stealing that idea. I’ve never stuffed em with sausage. I’m thinking maybe Jimmy Dean Spicy breakfast sausage.

            Never tried sausage either. I like that idea.
            Me I’m going with some reaper cheddar and wrapping in bacon than dusting them off with a reaper powder.

            Yeah... I also saw a recipe the other day for "shotgun shells." Load up dry manicotti with sausage and cheese, wrap in bacon, then smoke. Once the sausage is done and bacon is cooked, baste with barbecue sauce and cook until gooey.

          We've decided to take a "No Kids" vacation to Jacksonville, Florida now so i'll have to bow out of this one. Maybe I can do it the weekend after the fourth???
