Most days it’s nothing, a day or two a week two eggs with Frank’s Red Hot, If I eat a big breakfast on weekends it’s brunch and then an early dinner.

I usually cook breakfast on weekdays because my wife leaves for work before I do. It has to be fairly quick, but I try to mix it up and make it different each day. One of my favorite breakfasts to cook is when we have some leftover rice in the fridge. I'll scramble some eggs with a splash of ponzu, cook the rice for a minute or so to crisp it up a bit, then pour the eggs over the rice and cook them together with some chopped green onions. Then serve it with some furikake. Quick but tasty.

I like to make fried rice for breakfast. I usually make a bowl with a bit of fried spam, plain nori or salmon furikake with a sunny side egg on top and soy sauce.

Can't go wrong with an egg Mcmuffin sammy.

But typically: either dry cereal, some granola, an orange, or something similarly light and quick

Not a fan or oatmeal, but we know its good for you.

      Vacation breakfasts?
Waffles and bacon. And sausage. and eggs

1 Kodiak Granola Bar crumbled + 30g Grape Nuts + 70g frozen wild blueberries + 6oz chocolate milk all mixed in a bowl...let it rest for 10-15 minutes to let blueberries come to temp. Lol, but seriously!

Breakfast on weekends. Typically egg, bacon/sausage and either fried on bread as a sandwich or over easy.

Over easy eggs and toast on weekdays. On weekends, my kids are spoiled with buttermilk pancakes, buttermilk biscuits, or homemade bacon.

Coffee. Some weekends I'll do the whole Southern breakfast thing: biscuits, gravy, eggs, bacon, hash browns - all homemade. If I cooked a steak the night before and have leftovers before or if I have some ham that is added.

A glass of water with a cap full of Miralax and a TBS of Metamucil, then a cup of coffee with a hard boiled egg. The egg is for 1 of the 5 morning meds I take that requires to be taken with food. Don’t laugh! you’re all headed to pill land with the rest of us geezers!

I used to take my Metamucil at breakfast time, but I read it can interfere with the absorption of some of my morning meds.

Every Tuesday, my grandson comes over for breakfast: Tots (for him), scrambled eggs, and either bacon or sausage (my homemade). Sometimes the SIL stays, so a couple pots of coffee, then.
The rest of the week, I have coffee till lunch- to get an18 hour fast in.

Greek yogurt, granola (just no oats), banana, honey and some time of berry

my go to. And the granola I get is from Costco - it’s one of the keto/grain free that has a hint of cinnamon and dried blueberries. I could eat the bag it’s so good! As an evening snack occasionally, I’ll pour a little into a glass with some milk…ha!

but, this breakfast has been my mainstay for the last three or four years. Love it!

oh, and of course a cappuccino to start the morning off first
