Most days it’s nothing, a day or two a week two eggs with Frank’s Red Hot, If I eat a big breakfast on weekends it’s brunch and then an early dinner.

I usually cook breakfast on weekdays because my wife leaves for work before I do. It has to be fairly quick, but I try to mix it up and make it different each day. One of my favorite breakfasts to cook is when we have some leftover rice in the fridge. I'll scramble some eggs with a splash of ponzu, cook the rice for a minute or so to crisp it up a bit, then pour the eggs over the rice and cook them together with some chopped green onions. Then serve it with some furikake. Quick but tasty.

Coffee. Some weekends I'll do the whole Southern breakfast thing: biscuits, gravy, eggs, bacon, hash browns - all homemade. If I cooked a steak the night before and have leftovers before or if I have some ham that is added.

my go to. And the granola I get is from Costco - it’s one of the keto/grain free that has a hint of cinnamon and dried blueberries. I could eat the bag it’s so good! As an evening snack occasionally, I’ll pour a little into a glass with some milk…ha!
but, this breakfast has been my mainstay for the last three or four years. Love it!
oh, and of course a cappuccino to start the morning off first
