For the first time in several years, the wife and I are by ourselves with no dogs to care for. We're taking off on a three day ramble from central Florida through South Central Georgia, over to the coast where I will attempt to put a serious dent the the wild Georgia shrimp population.

A granddaughter is turning 11 today. We are going to celebrate on Saturday, and for the third year she has requested we celebrate at our lake house. (We've had it for 3 of her birthdays). Wife and I are going over tonite, I have no idea what I'm cooking tomorrow night. Going to grab some things out of the freezer here to restock the freezer there. Saturday at noon the birthday girl wants her dad's spaghetti and meatballs. I'm going to do burgers Saturday night. I am taking Sunday off, and I had thought about doing the brisket I have in the freezer, but the kids and grandkids that are here in Iowa prefer pulled pork, the ones who are currently living in Washington prefer brisket, so I'll save that until October when they are here. The pulled pork will probably cover two meals on Sunday. What I do on Monday will depend on who is there. Saturday it will be my son and his wife and kids, plus our daughter in law's parents, a brother and his family, and possibly another sister or two. They are going to stay overnight on Saturday, but I don't know exactly who is leaving between Saturday and Monday. Yeah, I guess I better throw some more possibilities in the cooler to bring over, just in case.

The supermarket just a couple blocks away from our lake house helpfully has pork butts for $1.79 a lb this weekend, so I picked up 4 of them, went home and put the two frozen ones back in the freezer. I'll smoke from 2 to 4 on Sunday, not sure yet, as mentioned, pulled pork is a good base for a lot of things. They also had spareribs for $1.99, so I took 2 racks of those as well. Might have to go back tomorrow and see what they have left.

Just trimmed 6 racks of baby backs, 1 rack of spares, and dino ribs for tomorrow. Supposed to rain all day, but I don’t care. It’s my birthday tomorrow, and super excited for this cook.

An update:
I posted that the wifey is out of town until Sunday evening. So Monday is the day for dinner together. I remembered/found that I had two 20 oz lobster tails in the freezer! These are huge! I get them from Lobsteranywhere.com. About $75 each. Ugh. But the perfect thing for a major holiday. I will update on Monday. 👍

My name is Josh, not Joey (surprise), and I reside in Central Ohio. I have been grilling since I could drive, and smoking for around 15 years. Over the past couple of years I have gotten more into just cooking, and really enjoy sous vide and the flat top. I find myself experimenting with different foods and new ways of cooking as an outlet to work stress. I use every piece of equipment I own regularly, with the exception of the electric smoker. That only gets brought out on occasion to make jerky.
My favorite beverage is bourbon. I typically have at least 8-10 bottles open at any given time. While I have favorites, I enjoy sampling new and different varieties.

I made an IPA in my backyard so that took up today's, well day. I have a butt in the fridge that I'm going to do at some point. I'd do it now but I need to clean my smoker out, and I don't think the neighbors would like that too much. A little, perhaps, but I doubt it. Steaks will also be consumed. Or ribs. Or chicken. I love 3 day weekends.
