    National Hamburger Month

    May is National Hamburger Month! How about we celebrate that by posting cooking techniques and favorite recipes for the iconic hamburger?

    Good idea! My personal favorite is a copy of a burger I had in Myrtle Beach at a fantastic place called the River City Cafe. If you're ever in the area it is mandatory that you go there, man-da-tor-y. You will not regret it I can promise you that.

    It is slightly involved, you probably don't already have everything needed, but I HIGHLY suggest you make it as listed. It sounds like drunk college kid food but it is a hit with everyone who's tried it.

    Well…I’ll have to make these this month for sure! Been way too long since I’ve made my Double Double Green Chile Cheese Smash Burgers! But here’s my addition to the thread for now!!

    Recipe or technique really for this goodness of once you pick it up, don’t set it down smash burger….

    cook your favorite smash burger, double smashed patty, double cheese and add chopped green chile. Thickly sliced white onion on the bottom bun, yellow mustard (thin layer on bottom bun, then on patties) to balance the richness from the beef and perhaps a little shredded iceberg lettuce on your favorite bun.

      I was making a shopping list this morning and pondering whether to get stuff to make smash burgers this weekend. Your post convinced me that that answer to that question is an absolute YES! Thanks for the nudge.

    I think I'm going to have to thaw some ground beef for this weekend and fire up the blackstone... Question is, should I thaw a couple pounds and invite some friends? Hmmm... Must talk to corporate accounting...

    Edit: Crap! The weather here this weekend is warmer but rain and windy for most of Sat and Sun. Dangit!

    Going to do some burgers tonight on the flat top. Nothing over the top. Some cheese, bacon and lettuce, tomato and mayonnaise...

        Made smashburgers for the grandkids last weekend but hey, why not again?! Broke out the 28" Blackstone from the garage. Been 3+ years since I used it so found a spot on the deck. Man I forgot how fun that thing is to cook on...and fast. I used 73/27 ground beef. Saturday I measured out 3 ounce balls, Sunday increased to 4oz. 73/27 has a high proportion of fat so the 4oz tends to work better.

          Yeah I make them a bit bigger than my usual 1/4lbers when they're 25% fat or higher. Those suckers swell and shrink, even as thin smashies!

          As soon as our newsletter was delivered, my sister (she subscribes) emailed me about the pimento cheeseburger and strawberry shortcake. Yup…. It’s a sign!

          My wife is at our daughter's on grandma duty from today to Saturday. I'll be doing grandpa duty with our son's kids from tomorrow night to Saturday, when she will take over there so I can come home for Sunday morning. Before she left today she requested Mushroom/Swiss Smash Burgers when we finally get back together for a meal. Good Timing!

                Here’s tonight’s humble tale of two salads for hamburger month…
                On the left we have a double smash, Oklahoma style, with mayo, mustard, lettuce and American cheese. Delish!
                On the right we have my new favorite salad consisting of grilled romaine, salt, pepper, shaved Parmesan and topped with a drizzle of balsamic glaze. Man, where have you been all my life?

                  Grilled Romaine is a pretty spectacular salad, if you ask me. That taste of the char is just so nice with the lettuce.

                  Full disclosure…. I can’t find pimentos by themselves here. So I used Calabrian chiles with a splash of the oil. Delicious! And I like lettuce and tomato on a burger.
